Our chefs have created a plethora of zero-waste recipes such as our quick and easy Broccoli Stalk Hummus. This delicious hummus utilises the often-overlooked, incredibly flavoursome stalk that commonly go to waste. We recommend serving with a bowl of steaming seasonal soup and freshly baked bread. INGREDIENTS: · ½ clove garlic · Pinch of Maldon salt · 1 broccoli stalk · 20g tahini · ½ lemon juiced and zest · 50ml of good quality olive oil · ½ bunch of parsley (washed) METHOD: 1. Bring a pan of water to the boil 2. Cut the broccoli stalk into small pieces (this will cook quicker and will be easier to blend) 3. Cook the broccoli till soft – approx. 2 minutes then cool and drain 4. Place stalks into a blender along with the oil, parsley, garlic, tahini, lemon juice and zest 5.
