Double trouble... Can you believe it was just a week ago that I posted about spanakopita and now I have to talk about it again? Spanakopita gratin at OMA in Borough, swept up with glistening malawach. Totally different to Morchella, equally irresistible. Do good things come in twos? OMA is certainly an argument in favour of that notion. A first floor restaurant which has a sister restaurant, AGORA, downstairs, think casual vibe, industrial interiors, walk-ins only. An antidote to the formality and precision upstairs, a place that you can pop into for a quick bite. The split, Ground Floor / First Floor restaurants with different concepts is a staple in pubs, lively Ground Floor, matched with a more elegant First Floor dining room. The most well-known example in the London restaurant scene is Super Eight’s corner of Shoreditch, housing Brat above Smoking Goat. The upper floors, not accessible from the street (obviously), are destination restaurants, with rents typically reflecting this. So just as we predicted that operators will increasingly favour building hype online to drag people around the corner to a side-street, expect to see more operators trying to convince their customers that the only way is up. Mānawa Bay incorporates more than 170 Parkwood doors and frames! The Garrison egress personnel (PA) doors were selected because of the higher levels of security, stability and strength. They are made of 100% aluminium. Other PA doors have timber or foam in their structure, meaning they can break down over time and are prone to bow and twist in the weather, especially when painted dark colours and exposed to all-day sun (as was the case in this project). The matching Garrison frames are far more robust, made from thicker aluminium extrusions, and are available in different modular configurations, meaning they suit a wide variety of PA uses, wall types and are far easier and faster to install. This all saves cost and resources. The predominant finishes for the Garrison doors and frames are Matt Ironsand and Matt Sandstone Grey. Throwback Thursday! Looking back at one of our most challenging installations—Patrick McGovern's two-level patio. Initially, we assumed the retractable roof would cover either the top or bottom patio. However, the client wanted a roof to span both levels and connect two separate buildings. On top of that, he requested an electric opening system—something we hadn’t yet developed at the time. And the deadline? Before St. Patrick’s Day, the pub's biggest event of the year. Despite these challenges, we delivered. The structure was completed on time, though the roof was manually operated for that first event in 2013. This project highlights our commitment to innovation and adaptability. Today is day 3 of the BOH series where we analyse each area and discuss why BOH is such a crucial part of all your projects. Today, we’ll be focusing on the Receiving area. Generally speaking, the receiving area is exactly what it sounds like, it’s a space set aside for food and beverage shipments along with other deliveries. You can count, and weigh the items for accuracy, and discard or keep aside the ones that don't meet the quality standard. There are 3 main factors to consider while creating this space: 1. Volume of the goods to be received 2. Frequency of delivery 3. Distance between receiving and storage areas Some things to keep in this area are: Weight/Scales, Dollies, Carts, Vegetable Washer, Receiving table, Sink, Drain, Gravity rollers, a Conveyer belt, and a trash can or a waste disposal area Some floor/counter space should also be allotted for temporary storage where things can be stacked until they are properly checked in. Most deliveries are done by trucks which means that you’ll need a loading dock outside. For efficient and easy functioning you should leave enough space for 2 trucks which is around 80-120 sq ft. This prevents any congestion and gives the driver enough space for the delivery to be quick and swift.
