It’s so good that I can always head to my local Tesco to pick up their ice cream, and know they’ll be delicious and always VEGAN!” Ice cream sandwiches: Making an ice cream sandwich using two cookies and a tub of ice cream is straightforward. Here’s a step-by-step guide: Ingredients: • Two vegan cookies (of your choice) • Tub of @wickedkitchenfood Cookie Dough ice cream Instructions: 1. Ensure the cookies are at room temperature if they’ve been stored in a refrigerator. This helps them from breaking when you press the ice cream between them. 2. Take the tub of ice cream out of the freezer and let it sit for a few minutes to soften slightly (not too much, or it will melt too fast). 3. Lay the tub on its side on a cutting board. 4. Using a sharp knife, cut a thick slice of ice cream through the tub. Aim for about 1 to 1.5 inches thick, depending on how thick you want your ice cream layer to be. 5. Carefully peel away the tub from around the slice. If the ice cream is too soft, you can use the spoon to help lift the slice out intact. 6. Place one cookie, bottom side up, Place the slice of ice cream on top of the cookie. 7. Place the second cookie on top of the ice cream slice, bottom side down. 8. Gently press the top cookie down to spread the ice cream evenly between the cookies. 9. Once the ice cream has firmed up again, unwrap your ice cream sandwich and enjoy! Spicy Pickled Carrots 🥕 Ingredients: 1 pound carrots, peeled and cut into sticks or coins 🥕 2 cloves garlic, peeled and minced 2-3 dried red chili peppers, sliced (adjust quantity based on spice preference) 1 cup white vinegar 1 cup water 2 tablespoons granulated sugar 1 tablespoon salt 1 teaspoon whole black peppercorns 1 teaspoon mustard seeds (optional) Instructions: Prepare the Carrots: Wash, peel, and cut the carrots into sticks or coin-sized pieces. Pack them tightly into clean glass jars along with the minced garlic and dried chili peppers. Make the Pickling Brine: In a saucepan, combine vinegar, water, sugar, salt, black peppercorns, and mustard seeds (if using). Bring the mixture to a boil over medium-high heat, stirring until the sugar and salt dissolve completely. Fill the Jars: Once the brine is boiling and well combined, carefully pour it over the carrots in the jars, ensuring the carrots are fully submerged. 🌿When you want a tasty special occasion drink … but you also want it to be healthy and alcohol-free, this is a great choice! 🥳(Note: a special occasion can mean any time you want a fizzy drink.) 🍒CHERRY MINT MOCKTAIL (makes 2 servings) 1 cup (140 grams) pitted cherries (fresh or frozen/thawed) ¼ cup (15 grams) fresh mint leaves ¼ cup (60 ml) lime juice 3 cups (700 ml) seltzer water (black cherry flavor if possible) 1-2 tsp honey or maple syrup Place the cherries, mint, and lime juice in a high-speed blender or food processor. Pulse a couple of times until they are just combined and not completely pulverized. Scrape out of the container, placing equally in two glasses filled with ice. Pour the seltzer water over it. Add honey or maple syrup to taste, stirring well. Looking for a fun and festive Easter recipe? Try these delicious Easter egg blondies! Ingredients ◾ ½ cup unsalted butter, 1 stick, melted ◾ 1 large egg ◾ 1 cup light brown sugar, packed ◾ 1 tablespoon vanilla extract ◾ 1 cup all-purpose flour ½ teaspoon salt, or to taste ◾ 1 cup M&M’s Milk Chocolate Eggs, divided (substitute with your favorite M&M’s if you cannot find those) Instructions ◾ Preheat the oven to 350F. Line an 8-by-8-inch baking pan with aluminum foil and spray with cooking spray. Set aside. ◾ Add the butter to a large, microwave-safe bowl and heat to melt, about 1 minute on high power. ◾ Wait momentarily before adding the egg so it doesn’t scramble. Add the egg, brown sugar, and vanilla and whisk until smooth. ◾ Add the flour and salt, and stir until just combined; don’t overmix. ◾ Add 3/4 cup M&M’s Eggs and stir to combine as best you can. They are slightly resistant to stir in, but do your best to incorporate. ◾ Turn the batter into the prepared pan, smoothing the top lightly with a spatula. ◾ Add the remaining 1/4 cup M&M’s Eggs evenly over the top, pressing them down lightly so they adhere to the batter. ◾ Bake for about 20 minutes, or until the top is set in the center and done. A toothpick inserted in the center should come out clean or with a few moist crumbs but no batter. Blondies firm up as they cool. Chocolate Cherry Cheesecake Bars Indulge in the perfect blend of sweet cherries and rich cheesecake with our Chocolate Cherry Cheesecake Bars. A decadent treat that's sure to delight! Ingredients: For the Chocolate Crumble Mixture: 3 cups flour ⅔ cup cocoa ¾ cup firmly packed brown sugar 1½ cups cold butter For the Cheesecake Filling: 2 cups (1 pound) cream cheese 1 cup white sugar 2 tbsp vanilla extract 2 tbsp lemon juice 2 large eggs 1⅓ cups fresh or frozen cherries, quartered For the Chocolate Drizzle (Optional): ½ cup chocolate chips 2 tbsp whipping cream Directions: Preheat your oven to 350°F (175°C). Grease or line a 9x13 inch rectangular baking pan with parchment paper. In a food processor, blend the flour, brown sugar, cocoa, and butter until the mixture is crumbly. Alternatively, use a pastry knife or two butter knives to cut the butter into the dry ingredients. Reserve 1 cup of the crumble mixture for topping. Press the remaining mixture into the bottom of your prepared pan. Bake the crust for 25 minutes, then let it cool slightly. For the filling, beat the cream cheese, white sugar, lemon juice, and vanilla extract until smooth. Beat in the eggs one at a time. Spread the cheesecake mixture over the cooled crust. Scatter the chopped cherries on top. Crumble the reserved crust mixture and sprinkle over the cheesecake layer. Lower the oven temperature to 325°F (163°C) and bake for 35-40 minutes, until the cheesecake is set. Let cool completely before slicing. For the optional chocolate drizzle, melt chocolate chips and whipping cream together and drizzle over the bars. Store in an airtight container in the refrigerator. Freezes well. 🍞 What's-On-The-Menu Wednesday 🥖 👩🍳 Dive into the world of homemade with this Easy 3-ingredient no-knead bread! 🥖 Not only is it a healthier option with 🚫 no preservatives or added junk, but it's also super easy to make and helps save a few dollars 💵 on grocery shopping. Plus, it's absolutely delish! 😋 What you'll need: 3 cups of flour (I prefer organic bread flour, but all-purpose works too!) 🌾 2 tsp. active dry yeast 🍄 1.5 tsp. sea salt 🌸 1.5 cups of warm water (about 105°F - not too hot!) 💦 2.75 quart Dutch oven (must have a lid) 🍲 Directions: 1. Mix flour, yeast, and salt in a large bowl. 🥄 2. Add water and mix until it forms a ball. 🌪️ 3. Cover with plastic wrap (sprayed with cooking spray) and a damp tea towel. Let it sit at room temperature for 18-24 hours. ⏳ 4. Preheat your oven to 450°F with the Dutch oven inside. 🔥 5. On a floured surface, gently shape the dough into a ball (It'll be a bit floppy!). 🍞 6. Carefully place the dough in the preheated Dutch oven.
