The Champagne Houses, or Maisons, that we recognize today, such as Moët & Chandon, Veuve Clicquot, and Bollinger, were established during this time. Every year I work with the most prestigious French wine estates in the four weeks following the harvest. It is a work on the concept of transformation, in this case that of grapes into wine, which is found everywhere in the universe. By plunging my gaze into the organic, I show how Man, who is at the heart of this transformation, reveals its cosmic dimension. In this visual metaphor where the vats of wine strangely resemble planets made like us of nitrogen, calcium, and iron I myself transform into “Stardust” to touch, for a moment, the origin of life. I go back in time to capture the DNA of these iconic wines in the early days of their birth. Last Champagne just arrived at "Italian wine collector", Piper Heidsieck "Rare" 1976 This complex cuvée was produced by Régis Camus, awarded best producer of effervescent wines internationally. Piper-Heidsieck Cuvée Rare is produced only in the best vintages and the 1976 vintage was the first to be released. Very fresh, it reveals a marked minerality alongside roasting, fruity flavours, a beautiful floral base and even spicy hints that reach the spiciness of pepper. In short, it is definitely complex. In the mouth, the spiciness returns clearly, therefore the fruit clearly turns towards citrus fruits, in a dense and rounded whole accompanied by a delicious bubble. It is a champagne of volume and silky, very elegant and fresh. It was in 1851 that the thirty-year-old Charles Heidsieck founded the Maison which still bears his name today by purchasing some maturation cellars in Reims, capital of the Champagne region. One thing is immediately clear: leave the management of the vineyards to those who know how to do this job best and purchase only those grapes capable of satisfying its very high quality standards. Not only that, Charles-Camille, this is his first name, immediately understood the importance of a particularly long maturation to obtain high-class products. His are in fact Champagnes that remain on the lees for a much longer period than average. His innate salesmanship quickly brought him success, his wines were appreciated practically all over the world. Today, more than a century later, despite the Maison being owned by the Rémy-Cointreau group, almost nothing has changed about the style that Heidsieck had created from scratch. In fact, his wines are still deep and multifaceted Champagnes today, always characterized by a particularly significant rest on the yeasts, in particular for his extraordinary products. With Champagne's many complex variables, it can be difficult to know which wine's an investment and which is the one for this weekend? These five top tips from Tom Hewson may help you decide: 1. Look for vintage (or tirage) date and disgorgement date on the bottle. 2. A good rule of thumb for younger wines is not to age them for longer post-release than they had on lees. 3. Be cautious ageing wines that advertise ultra-low (or zero) sulphites. 4. Magnums age more slowly. 5. Chardonnay-based blends often age less oxidatively.
