Conversations with Mally Skok: Entertaining Tips

We are thrilled to welcome Mally Skok to talk to us about all things entertaining! Whether it’s a sit-down dinner or an open-house cocktail party, Mally shares her tips and tricks to make the effort of entertaining effortless!

Bruce: You know this is way outside our normal subject matter I feel a little foofy in a good way. Sarah: It’s so true. I mean builders aren’t really known for their fabulous entertaining.

Bruce: This we want to talk about sort of party and the intersection between parties and architecture and design.

Sarah:  Yeah, and I think even Furniture.

Mally: When you asked me to come and chat with you I think the people who want to do effortless entertaining in their kitchen don’t understand that there is a lot of effort that needs to go into effortless entertaining. And there is nothing worse than arriving at someone’s house and they’re sort of scrambling to find out whether there’s ice in the ice tray and nobody’s relaxed. So having a plan and a setup, doesn’t matter how small your house is or you know, your kitchen having everything set up and ready to go. I like to have a welcome drink that’s poured already on a tray and then everyone can just get on with it and be a guest and let you enjoy your hosting. Otherwise, it’s a scramble. 

Sarah: So when you what kind of hosting do do like? What kind of parties do have? 

Mally: I like to keep my parties really personal. I come from a family that cooks so I’m happy to get into the kitchen the day before and I like a meal – whether it’s a lasagne or a big chicken thing and salad. I think that itty bitty food is exhausting and everyone isn’t really full at the end of it. 

Sarah: Yes. Yes. I have a breakfast dish that I make because we have a huge family and that is it – it’s in a pan. It’s in a sheet pan. And it’s eggs and ham and cream and cheese and just these scatter it all together and you stick in the oven what it is instead of standing there flipping pancakes. It’s the difference between those two approaches. 

Mally: Yeah, big green salad and you know, nice fresh bread and also, I think if you’re a lot people it’s nice to get some help but catered parties get that commercial feel them that it’s very impersonal and unrelaxing. So if you can, keep it looking like it’s you doing the work using your own containers.

Sarah:  But how do you set a kitchen so that for example, if you’re cooking ahead of time then are you trying to finish in time to clean it all up or you’re not to just put a lid on it? 

Mally: No, I think honestly being as prepared as you can ahead of time and making choices that don’t need last-minute pancake flipping, and then cleaning up your kitchen. It’s useless trying to keep people out of the kitchen because they will end up in the kitchen. So a nice setup on your kitchen island with, you plates knives and forks and whatever the hot dish is. I like people to be able to just sit with their friends and you know, if don’t have a of space they’re fine on the stairs or going outside.
