Whenever I truly enjoy a meal, especially when I'm on vacation and know I probably won't ever make it back to that particular restaurant. I always take a picture and try to recreate it at home. This dish I had in Sciacca, Sicily in Italy. It was the most delicious risotto I've ever had, topped with a cheese that's a specialty in that area. Needless to say, I've had to make some adjustments and use my American ingredients so it's a nice, easy recipe. Risotto is very simple, but quite time consuming. It requires a lot of attention and love, but it's all worth the effort. Calvin ate four bowls of it after we made it!
