Upside Down Pizza

We won’t ask if you’re a fan of pizza. We know the answer. But if you can get behind a batch of flaky homemade biscuits at the same time, this recipe might be calling your name. If one had to describe this dish, it’s something akin to a savory cobbler. All of the meaty and cheesy pizza fillings are combined in the bottom of a casserole dish, then everything is topped with canned biscuits, which stand in for the pizza crust. If this pie is upside down, we don’t want to be right-side up.

This dish is as simple as it gets. It comes together in under an hour, so it’s ideal for busy weeknights. The most work you’ll do is to browning the meats. Here, we fry up a combination of ground beef and sausage before adding slices of pepperoni, but you can use any combination of these that you like; better yet, go ahead and incorporate other meats like ground pork, bacon or prosciutto. The only thing left after that is to stir in some store-bought marinara sauce, a few handfuls of spinach and shredded mozzarella cheese. 

What makes this recipe even better is how versatile it is. If you’re not in the mood for a meat-lovers dish, lighten things up by adding vegetarian pizza toppings, such as sautéed mushrooms, roasted peppers, fried eggplant or artichoke hearts. Or try recreating the ever-divisive combination of ham and pineapple. Either way, the fluffy biscuits will become soft and tender as they bake; they’re just the thing we want to use to scoop up all of those saucy pizza toppings. 

Ingredients

  • cooking spray, for greasing
  • 1 pound ground beef
  • 1 pound ground sausage
  • 1 (25.5-ounce) jar tomato-basil sauce
  • 1 cup pepperoni slices
  • 2 cups fresh spinach
  • 2 cups shredded mozzarella cheese
  • 1 (16-ounce) can flaky biscuits

Preparation

1.

Heat oven to 375 F. Grease a 9-by-13-inch baking dish with cooking spray.

In a 12-inch skillet, cook beef and sausage over medium-high heat for 5 to 7 minutes, stirring frequently until meat is brown. Once browned, drain the grease from the meat and place the drained meat in the 9-by-13-inch baking dish.

Top the sausage and beef with all of the pasta sauce. Sprinkle pepperoni slices over sauce. Add spinach and shredded cheese.

Separate the flaky biscuit layers, pinching with fingers to flatten. Place the biscuit layers over the pizza mixture to cover entirely.

Bake 20 to 25 minutes or until biscuit dough is golden brown. Remove from the oven and let cool for about 10 minutes before serving.
