Not the most glamorous piece of equipment but if you are having problems with your Yoghurt separating or having a slight powdery appearance get yourselves a large drum like this. Blend all your dry ingredients together prior to mixing in the tank i.e. weigh off the stabiliser, sugar, artificial sweetener, preservative, milk powder and whatever else you are using and literally roll the drum back and forward on the floor for at least 20 minutes. If you can’t add all the powder split the mix into two and dry blend all your ingredients first then add to the milk slowly and mix thoroughly. You will never have as smooth a Yoghurt if you incorporate this step as a rule.
