    Being a company that is on the cutting edge of technology when it comes to preserving foods, Savour Solutions loves stories about other food companies that are doing the same. If you live in the USA, you would probably be aware of this groundbreaking brand. It is a company called Banza. They have taken chickpea, and made a pasta out of it - well that is where they started 10 years ago. They now make rice, pizza bases, and waffles too. Chickpea is high in protein - in fact it has 50% more protein than traditional flour based pasta. Innovation at its best!     Did you know that the food you eat can determine what mood you are in? And it all has to do with the trillions of bacteria that reside in your gut. In fact these bacteria make up about half of the cells in your body!! The common term for these residents is the "microbiome". How do they play a role in your mood? They are a chemical factory - and depending on what chemicals are produced - which in turn is dependent on what microbes are present in your gut - determines our mood. Short-chain fatty acids and neurotransmitters produced by the microbiome, cross the blood-brain barrier and influence mood and brain function. With this in mind, we are constantly running trials on our products - whenever we have a unique situation, or a new food type, we want to make sure our products do what we know they can do. Our latest trials on one of our products - Surf-X - on Russian sausages, showed a 10 times reduction in total bacteria after both 21 and 28 days.     "Listeria" - a word that strikes fear into the hearts of food manufacturers. And if it does not, it should. Listeria monocytogenes is a killer. There are well documented cases where outbreaks of this pathogen in food manufacturing facilities has been the cause of illness and death in consumers. Whether it comes in on raw materials, or finds a place in your facility where the cleaning has not quite been up to scratch - Listeria contamination could very well mean the end of your brand! Having said this, the fight against Listeria is not hopeless. There are a number of things that can be done to mitigate the risk - ensuring your suppliers are reputable is one step that can be taken. A strict cleaning and disinfecting regime with follow up environmental microbiological tests conducted by reputable accredited labs is another. Then there is treating the actual product... Savour Solutions tested one of their products in processed cheese. The results were pretty amazing. The untreated cheese had 1500 Listeria monocytogenes bacteria per gram, and the cheese with the Savour Solutions product had less than 10. That is a pretty impressive drop considering that a count of 1500 is pretty unique in that it is a very high contamination level! Keep in mind too, that all Savour Solution products are entirely natural and use cutting edge bio-disruptive technology to get the job done.     The household world of keeping food fresh has been thrown into turmoil by one monumental event! Tupperware filed for bankruptcy! Growing up, Tupperware was part and parcel of South African's lives - as I am sure it was in the 69 other countries where it was sold. From school lunch boxes, to keeping left overs fresh, to picnics, to those all important gatherings ... the Tupperware party. Tupperware was treated as gold - and beware anyone who did not return your Tupperware after using it to take your extra wors home after the braai! There is an element of truth in the joke ... "There are three things that will survive a nuclear fallout - rats, cockroaches ... and Tupperware." It is pretty much indestructable. Tupperware made storing, transporting and keeping food fresh easy. And they did it well - with the specially designed sealable containers that you could fill with liquid and turn upside down knowing that it would not leak. A sealed container means fresher for longer. Something all food manufacturers appreciate. Although it is sad to imagine a world without Tupperware, let's take a lesson from them - fresher for longer is the goal!

    While browsing through a book about what food different cultures around our globe eat, the stark contrast between the western countries and so called third world countries was astounding. The West had mostly packages - processed foods - while the rest of the world still eat "natural" food. Add into this the fact that one of the latest emerging trends is what has been called "alternative protein sources". Part of this trend are the latest scientific advances in food manufacturing - cultured meat and lab-grown food. Let's face the fact that the Western World is going to move more and more towards processed foods - for convenience and simply because that is the way the society has developed. We cannot compare ourselves to other parts of the world because our society has developed differently - with different needs and pressures. However, that does not mean that we need to settle for substandard food - we can still enjoy highly nutritous food that is good for your health too. As manufacturers we need to make sure that we are offering the very best we can in our products within the boundaries of the Western society norms.

    In the modern world of supermarkets and malls, shelf life is a necessary consideration for any food processor. Much of the time, preservatives are the solution to these issues. However, in the ever increasingly health conscious western world, preservatives are becoming a bit of a taboo. And with good reason. We find children particularly susceptable to the ill effects of chemical preservatives. Breathing problems such as asthma can result from the use of aspartame, sulfites, and benzoates. Obesity and hyperactivity has been linked to preservatives. More serious side effects can be cardiovascular diseases, and cancer. Preservatives also affect a child's neurological development and the endocrine system. The endocrine system regulates hormones, which in turn can affect things like development in puberty. As a food manufacturer, the health of the end user is a big consideration, however, the shelf life is just as important. The good news is that there are alternatives to chemical preservatives.     One of the latest statistics coming out of the food industry has to do with ingredients in food. Gobal consumer research shows that one in three consumers always look at the ingredients on the packaging to inform their decision to buy the product or not. To the everyday man in the street, this is an interesting fact, and possibly something that resonates with you as you are one of those who fall into this category. However, as a food manufacturers, it is something that can either be worrying, or comforting. There are two questions coming out of this for the food manufacturer - firstly, is the labelling on my product' correct, and secondly, what ingredients are actually in my product, and will they make a difference as to whether it is bought or not? In our health conscious society, having preservatives and other additives on the ingredients list can often be the cause of a non-sale. Alternatively, if these additives are all natural, they could instead be used as a reason to buy the product.     A food related trend that is coming to the fore in 2024 has been termed "culinary upcycling". In our Western society we tend to create a lot of waste - food being one of those. The parts of the food that we would normally discard is what culinary upcycling targets. Those peelings and bits and pieces that are cut off and thrown in the waste bin still have an enormous amount of nutrition in them. For example, take the humble potato...the peels contain 40-50% dietary fiber. They have also been shown to be rich in phenolics and vitamins such as riboflavin, ascorbic acid, folic acid and vitamin B6. All this goodness is ending up in the bin. Apart from the obvious environmental and health benefits, the new flavors and textures that are present in the bits and pieces that are normally thrown away will give your palate some new and exciting experiences.
