I had the incredible opportunity to attend the International Congress of Meat Science and Technology (ICoMST 2024 – Brazil), held from August 18 to 23 in Foz do Iguaçu. It was a unique experience to learn more about meat science and technology through insightful presentations and discussions led by both international and national researchers. Additionally, I had the privilege of meeting amazing people from all over the world, expanding my network and exchanging valuable ideas. Responsible meat production – The future meat🍗 📍More than 400 participants from research and food industry met in Brazil at International Conference on Meat Science and Technology. 🎙 The topic was Responsible Meat Production There was a great optimism about the world’s future meat production. Out of 400 participants, there were only 4 from Norway. One of them was the Nofima researcher Rune Rødbotten. 🌭He presented results from the project AnimalFat+ where they showed that in sausages saturated fat can be partly replaced by unsaturated with minimal effect on taste and texture. The conference was held in beautiful Foz do Igassu, which is the largest water fall in the world. I’m thrilled to share that I recently had the incredible opportunity to participate in the International Congress of Meat Science and Technology (ICoMST 2024 – Brazil). This prestigious event brought together leading experts, researchers, and industry professionals from around the globe to discuss the latest advancements and innovations in meat science. The conference was both enlightening and inspiring, offering valuable insights into sustainable practices, food safety, and quality enhancement. This experience has deepened my understanding of the field, and provided me with numerous opportunities to connect with like-minded professionals. I look forward to applying the knowledge and connections gained from this experience to my future endeavors. In addition to the enriching sessions and discussions on cutting-edge research, I had the chance to explore the magnificent Foz do Iguaçu Falls—an awe-inspiring natural wonder that left me breathless. I also visited vibrant local areas, immersed myself in Brazilian cuisine, and experienced the warmth and hospitality of the Brazilian people. I thank to the organizers and speakers for such a well-executed event and for creating a platform where knowledge and ideas could be exchanged freely. Just back from Brazil, where I was honored and I had the pleasure to contribute to the 70th International Congress of Meat Science and Technology (ICoMST, https://lnkd.in/gnbP3mMD) with a talk on microbiome/biopreservation/bacteriocins as a strategy to improve shelf life and quality of food, with an emphasis on meat. Gostaria de parabenizar enormemente toda a comissão organizadora e científica dessa edição. Organização e toda a programação de excelência, impecável! Sem sombra de dúvidas um dos melhores Congressos que já participei desde que iniciei minha vida acadêmica há cerca de 15 anos. Expectativa alta para Girona no ano que vem!!
