ANNOUNCING Lone Star's New Brand!!!
"Taking on a challenge is a lot like riding a horse, isn't it? If you're comfortable while you're doing it, you're probably doing it wrong." After 35+ years of serving up our famous fajitas, margaritas, and Tex-Mex we are excited to announce that our brand new Lone Star Cantina will come to life in early Spring 2024! We are incredibly proud of our rich history and can't wait to continue providing delicious Tex-Mex cuisine, incredible service, inside a newly designed vibrant space in Whitby at the Whitby Entertainment Centrum. The Cantina will have a brand new menu carefully crafted with the support and culinary direction of the talented Matt Basile. Our new menu features some authentically bold new Tex-Mex flavours and menu items alongside our guests favourite fajitas. Of course no menu would be complete without some innovative margaritas and cocktails from Alysha Chiappetta at the Lil' Chia Beverage Company. This new design and direction would not be possible without the help of the team at McMillan Design and our construction partners at Build Construction. Special thanks to our new friends at The Laundry Design Works for bringing some of the exceptional new branded elements to life. As 2023 officially comes to a close, I wanted to share about a huge chapter of my life closing this past year. In November, I worked my last shift at Lone Star Texas Grill Hunt Club, a second home for the last nine years. At 16, I started my first “real job” as host, and eventually worked takeout, serving, bartending, and even managing. Those four walls saw me through many stages of my life; always a safe guiding light in the “I have no clue what I am doing years” (although, it feels we never really know). Over the last nine years, I have had the privilege to work with some very special people who made a serving job, much more than that; a family, a home and above all, a place to learn and grow as a person. To my two little sisters, and little brother who followed in my footsteps, it has been the pleasure of a lifetime to work together. To my parents, who celebrated every birthday, anniversary, graduation and holiday at Lone Star so we could be together as a family, it has been a fun ride. I look forward to sitting on the other side of the table with you. I thought now would be a good time to share some things I have learned over the years: Restaurants can be a scary place. They show you an impatient, rude, and downright cruel side of people; but they also show you a compassionate, empathetic, and truly remarkable side (sometimes on the very same night). My life is forever touched by strangers I have had the pleasure to serve over the years, some of which I will never see again. I remember you, your stories, your advice and how your words touched me. I hope some of you remember me. Restaurants bring people together, they provide a space to celebrate, connect, laugh, love and sometimes cry. I’ve had the opportunity to be a part of family dinners, first dates, anniversaries, old friends catching up, meetings, birthdays, team parties, and retirements, to name a few. Being a part of other peoples' moments and lives, no matter how small, is a special feeling. To my fellow industry folks, never underestimate how sentimental a restaurant can be for some. Take time to ask why they are there, and find joy in connecting with them. Restaurant experience is real experience. I have been lucky enough to work for two amazing employers who have seen value in the years I spent in the restaurant industry. Your ability to work under pressure, in a fast-paced environment, to deal with all kinds of people and personality types, to work on a team, and make it through the worst shifts, they show grit, hard work, and passion. If you are looking to leave the industry, do not be afraid to talk about your time in restaurants while interviewing; the right employer will value that. To everyone who made the last nine years so special, thank you. I have learned so much from so many people, and I hope I have been able to teach a few people some things. I walk away with friendships and love to last me my lifetime. 86 Blaze
