Functional lipids, such as medium-chain triglycerides (MCTs) and high oleic oil (HOS), are believed to play crucial roles in the body, including cell signalling, inflammation regulation, and neurological functions. This savoury flavour is often referred to as the ‘fifth taste’, alongside sweet, sour, salty and bitter. Umami adds depth, richness and balance, rounding off the overall flavour without overwhelming other tastes.     Reducing sodium intake has become a significant priority worldwide. There are many voluntary sodium reduction initiatives, but some countries are now planning to implement mandatory policies to decrease sodium consumption. This type of regulation is only likely to become more common with increasing pressure from health-focused organizations like the WHO.
