In this week's Origin Story Series Interview, we spoke with Christopher McClure, of Loki Foods, which makes a vegan alternative to white fish like cod or haddock. Based in Iceland, Chris has been plant-based for the better part of two decades, and founded his company with the idea that a fish replacement was a critical, and generally under-addressed, solution to the current crises of the climate and the ocean. With a product that mimics the texture, taste, and overall experience of eating white fish, while even improving on most of its nutritional aspects, Loki Foods is on an impressive upward climb in the alternative protein sphere. Around 90% of fish species are on the brink of extinction or already extinct. In Iceland, where we produce 1% to 2% of the world's seafood, which constitutes 30% of our GDP, we have centuries of expertise in seafood. If we can't harness that expertise to develop pleasant-tasting, sustainable alternatives, the global position isn't promising. But, again, we’re more than alternative seafood. We’re more than simply alternative protein. We’re shapeshifting the food system."
