JRS Silvateam Ingredients S.r.l. is a recent joint venture between the Italian group Silvateam S.p.A. and the German JRS Group with the aim to join forces in the production and sales of pectin and texturizing systems as well as distribution of tara gum. The joint venture will invest significantly in development and production of novel vegetable based texturizing solutions with high consumer acceptance to respond to the increasing demand for label friendly food ingredients. The company presents a wide range of pectins, registered under the Aglupectin® brand, including high methoxyl pectin and conventional and amidated low methoxyl pectins. It also produces functional systems, registered under the Aglutex® brand, containing emulsifiers, stabilizers and other specific ingredients blended to improve the consistency, mouthfeel, stability, and taste of the finished products.

A training session full of insights, teamwork and of course… great bread!🥖 ✨Recently, we teamed up with JRS J. Rettenmaier & Söhne for a bakery training in Bergamo, getting our hands in the dough…and into citrus fiber and tara gum science for bakery applications. 👨🍳 Under the guidance of the bread sommelier Gerhard Gröber and the Global Business Line Manager Barbara Zech, our team explored the functionalities of citrus fiber and tara gum in different baked goods, testing existing and new formulations in: ✅ Sandwich bread with fiber ✅ Ciabatta with fiber ✅ Gluten free bread ✅ Gluten free muffins 🔬 Key takeaways ✅ Citrus Fiber enhances fresh-keeping, maintaining baked goods softer and fresher for longer. ✅ Tara gum, in synergy with other ingredients like HPMC, helps structure gluten-free products, mimicking the role of the gluten network. We are pleased to kick off our 2025 compilation by presenting you Vittorio Scornaienchi, the cornerstone of our quality control team. 💡With a solid academic background in molecular biology, Vittorio holds a Ph.D. in Molecular Genetics, a Master’s degree in Biological Nutrition, along with 10 scientific publications on the genetics of neurodegenerative diseases in esteemed international journals. 💞 Vittorio joined JRS Silvateam Ingredients family in 2011, starting in the pectin packaging area. Thanks to his determination, he acquired in-depth knowledge of the production process, working across various areas of the plant, including flocculation and the supervision of the pectin purification phase. This experience prepared him to enter the laboratory in 2020, where he initially focused on raw material analysis and later specialised in pectin quality control. 🍋 Ever wondered how pectin – the natural ingredient that gives your favourite jams, jellies and beverages their irresistible texture - is made?🍊 Here’s a quick look at our process: 1 - Fruit selection: pectin is sourced from citrus peels, leftovers of juice and essential oil production. 2 - Extraction: the fruit peels are heated in water to release the pectin, in acid conditions. 3 - Separation: the spent peels are separated from the pectin syrup. 4 - Filtration: the pectin syrup is filtered to eliminate impurities. 5 - Precipitation: separation of pectin from the liquid phase. 6 - Purification: the pectin then is purified, dried, milled and sieved. 7 - Standardisation: the pure pectin is blended with sugar or salts to ensure consistent functionality, including gel strength, viscosity and protein protection, which may vary depending on the specific application.
