🌱 #Taste is the key to consumer acceptance of meat and dairy alternatives. However, the taste of these alternatives is not optimal, particularly if it is linked to Dutch sources of #protein. Researchers from Wageningen University & Research discuss desirable and undesirable flavours and how plant-based alternatives can be made tastier. 🥩 Copying the taste of #meat is extremely complicated, particularly with ingredients which taste totally different, like fava beans or split peas. These ingredients can be grown in Europe, which is why they are preferred for #sustainability reasons. 💦 Per- and polyfluoroalkyl substances (#PFAS), make clothing waterproof and paper grease-resistant, but they are so persistent that you find them in foods and the environment. Researchers are trying to figure out where the substances end up, what their impact is, and above all, how we can get rid of them. ⛔️ "Banning and phasing out cannot be done without replacing them. There’s a reason PFAS are in all kinds of products and processes. You’ve got to look for other chemical substances or new materials that can take over the function of PFAS. Far too little attention is being paid to that problem," says Jacco van Haveren. "Sometimes PFAS are used as a kind of soap or cleaning product, and that is relatively easy to find substitutes for. But in protective coatings for pipes in industry it’s not so easy, and the same goes for the production of medicines or the manufacture of chips and high-tech electronics. ☕ Making tea is labour-intensive. It starts with the picking. The best leaves, the ‘two leaves and a bud’, grow on top of the plant from March to September. Besides craftsmanship, the secret to the best quality tea lies in those leaves and bud, says Wouter Eckelmans. At LocalTea, they pick by machine, with human precision. 🤖 He is enrolling LocalTea, together with Wageningen University & Research Vision+Robotics researchers and machine builder Van Wees Waalwijk, in the NXTGEN Hightech programme. An umbrella initiative that aims to encourage SMEs to invest in technological advances. To develop a one-stop #tea #machine together. 1️⃣ First step: see if and how you can automate, manage and control the artisanal tea process. #WUR researchers are analysing what happens when in the tea leaf during that production process, and whether you can monitor and control it, says research associate Fátima Pereira da Silva. To that end, they replicated the entire tea-making process in separate parts. To dry the tea, they used their own drying oven. 🌴 Palm oil has had a bad name in Europe for many years. Demand for this multipurpose oil has soared since the 1980s. It is used in an incredibly large range of products from cookies to cosmetics, and from noodles to biodiesel. And the result has often been the loss of forest and of biodiversity. Yet palm oil deserves better than this, claim Wageningen researchers Maja Slingenland and Wolter Elbersen. Both researchers have been working on improving the ecological and economic status of the oil palm in #Indonesia for many years, in collaboration with farmers, research institutes and the government. Even without felling trees or using virgin peatland, it is possible to meet the growing global demand for palm oil for use in food, Elbersen and Slingerland believe. In 2022, Wageningen University & Research began working in the SustainPalm project on reducing the ‘yield gap’ and saving land by using different techniques and developing new business models in small-scale experiments with farmers, companies and research institutes.
