Something is definitely up when you see convergent evolution of thought in an industry. For us at ProfilePrint - AI-driven Ingredient Quality Platform, we have been getting requests to use AI to inform coffee blending. Such blending of coffee serves various purposes, including creating viable substitutes for a current blend to optimise cost and stock stability; creating a blend with a more balanced and accessible flavour profile; emulating a competitor's blend to broaden one's own product portfolio amongst others. It was therefore intriguing to read the following article on Global Coffee Report on the use of genAI to generate blends to accelerate the overall product development speed of a coffee roaster. By specifying the desired flavour notes, the AI technology was able to propose a blend featuring 4 coffees immediately that suited their purposes. On the other hand, ProfilePrint had launched an AI module to also blend coffees, and while the overall concept was similar, we used the digital fingerprints of coffee as the basis for blending instead, arriving at similar kinds of results where a blend with up to 4 or 5 coffees could be rapidly proposed, often with beans that were not intuitive to a blender. With AI, "preliminary" blends can be rapidly generated, often in ways that surprise the humans, just as how we have been surprised by the creative outputs of the various LLMs and image generating AI models we have today. The man in the loop comes in at the end, to finetune the final product, give it that human touch that would make the difference between a great blend and a perfect blend. Specifically, they were concerned about the presence of maltodextrin and chicory, commonly used adulterants that can negatively impact taste and quality, and influence financial margins and brand reputation. Traditional methods of detecting adulteration are often time-consuming and expensive, making them impractical for routine screening. ProfilePrint trained a customised model to recognise the unique chemical signatures of pure instant coffee, coffee mixed with maltodextrin, and coffee mixed with chicory, at concentrations ranging from 0-60%. This model was then tested on six blind samples with unknown levels of adulteration. ProfilePrint’s AI Apprentice successfully predicted the type and level of adulteration in each sample, with a maximum error rate of only 4%, which surpassed our client’s desired accuracy threshold of 10%.
