For the Rat King, you have enough time to build a marketplace, warrior's guild, and one other guild before King Rat first spawns. Build them quickly while your ambassador is talking, research healing potions, research the warrior guild bell, then recruit heros. By the time the rat appears, you can pop the guild bell and tell your heros to protect whatever building it looks like he's going after first. Doing all this should allow you to maintain what you started, and your kingdom will be fairly easy to defend as you go from there.
