The objective of FunTomP is to reformulate traditional Mediterranean tomato products considering the current consumer trend of ‘functional foods’, using leaf proteins (by-products of sugar beet processing) and olive powder by using novel and eco-friendly processing technologies that will impact the nutrients minimally. Tomato will be transformed to different functional foods (juices, sauces, leather, bars, powder mixes) offering extra health benefits to satisfy the consumer demand while keeping a sustainable product and process cycle with the valorization of agricultural waste.

🌿 Sustainable Extraction of Bioactive Compounds from Sugar Beet Leaves ⚡ Our newest research examines how ultrasound (US) and high-voltage electrical discharge (HVED) can be used to extract bioactive compounds from sugar beet leaves—an underutilized by-product of the sugar industry. 🔬 Key findings: - US-assisted extraction resulted in the highest antioxidant capacity (AC) when using 25% ethanol as the extraction solvent. - HVED-assisted extraction proved highly effective for extracting Vitexin, a flavonoid with known health benefits. - Antioxidant capacity was measured using DPPH, FRAP, and electron spin resonance (ESR), showing strong correlation across methods. - Optical emission spectroscopy (OES) revealed that the plasma characteristics were influenced only by the gas used (nitrogen/argon), not the solvent or sample. Why does this matter? With growing concerns over food waste and sustainability, green extraction techniques such as US and HVED offer energy-efficient, eco-friendly alternatives to conventional methods. By improving the yield of bioactive compounds, these methods help create functional foods with added health benefits while reducing agricultural waste. 🌟 New Article Published! 🌟 We are pleased to share our latest research on the thermal characteristics and degradation kinetics of sugar beet by-products, published in Foods journal. This study contributes to advancing the sustainable use of agricultural waste, specifically sugar beet pulp and leaves, as valuable components for functional food production. 🔍 Key Highlights from the Study: - Thermal Behavior: Identified two key temperature ranges for thermal events—31–153°C and 150–160°C—via differential scanning calorimetry. - Degradation Kinetics: Analyzed four distinct thermal degradation stages (25–700°C) with activation energy ranging from 50–200 kJ/mol. - Industrial Implications: Results emphasize the potential of sugar beet leaves for sustainable food additives and their application in bioethanol production. By transforming waste into high-value food ingredients, this research aligns with our mission to promote sustainability, circular economy principles, and adherence to the Mediterranean Diet. It’s great to see FunTomP’s results coming to life and our team growing with such amazing achievements. Congrats and best wishes ahead!
I’m happy to share that I successfully completed my thesis project, with that I’m closing an important chapter of my academic journey at the American University of Beirut as a mastercard scholar. This achievement wraps up months of hard work, research and persistence. My thesis, titled “Antioxidant Properties of Functionalized Tomato Sauce and Leather” conducted in association with the FunTomP project, explores how integrating tomato byproducts and Mediterranean ingredients can create innovative, sustainable and health enhancing food solutions. I am grateful to my advisor Mohamad Abiad his invaluable support and guidance through this project. This journey has been a mix of excitement, challenges, perseverance and a lot of learning on a personal and professional level. Excited to apply what I’ve learned in future opportunities, contributing to a more sustainable and health focused food system.
