One of my favorite trends in the #betterforyou #foodandbeverage category is collaborations between talented, high-profile chefs and ingredient producers/CPGs. I am especially excited about a new project between Cabra chef/partner Stephanie Izard and Nature's Fynd. During a special brunch at the award-winning Chicago restaurant, Izard and Nature’s Fynd CMO Karuna Rawal first demonstrated just how versatile the company’s hero ingredient, the proprietary fungi Fy, is. The non-animal protein is used to make dairy-free yogurt, cream and sour cream as well as meatless breakfast patties. Of course, Izard added her own culinary magic, including spicy Fy mayo, avocado Fy yogurt, whipped Fy cream cheese dip and hazelnut fun crunch Fy ice cream. It was all so good.
