🥘 Despite 70% of food companies in the UK and US using AI, only a few are tapping into, or are aware of, its full potential to drive sustainability efforts, according to a new report from Foods Connected Ltd. "How bad are bananas?" 🍌 That was the question posed by Mike Berners-Lee in his book How Bad are Bananas?: The Carbon Footprint of Everything. When it comes to carbon footprint, some foods are much larger contributors than others. Just a few of the factors to consider include: ✈️Airfreighting: responsible for less than 1% of total UK food miles, but produces 11% of the CO2 emissions from UK food transport ☀️Hothousing: 250g organic vine cherry tomatoes grown in a fossil-fuel heated greenhouse in the UK in March has a slightly higher CO2 equivalent (7kg) than driving five miles in an SUV ❄️Production & refrigeration: a litre of fresh orange juice can have a CO2 equivalent (5.76kg) of just over 6kg oranges – many more than it takes to make the juice. Tracking the impact of these factors within your supply base is the key to driving improvements.
