The GAIL’s story began in 2005, when the first bakery opened in Hampstead to make world-class artisan bread more widely available beyond London’s top restaurants. The founders’ aim was, and remains, to reinvent the way Londoners think about bread – fresh and handmade – and their neighbourhood bakery – local and beautiful.

    We're back baking at Frieze Masters and London for a twelfth year. The relationship between art and baking has always fascinated us, because of the shared emphasis on craft. Serving this very special, ephemeral neighbourhood in Regents Park inspires us to be creative. This year, we're brewing our iced teas and preparing sandwiches designed to fuel busy art-lovers, alongside established favourites from the baker's table.     For our new bakery in Ruislip, we were fortunate enough to find a space which is the cornerstone of the high street. The design nods to the town's long-standing relationship with water, through the River Pinn and Lido, with its deep blue tiling and simple palette of stainless steel and stained timber. We will share any leftover baking with Blossom Education, who provide a weekly community meal for families and run antenatal and postnatal classes for vulnerable women. 63 High St, Ruislip HA4 8JB

    A bakery should be a joyful destination, as vibrant and warm as the community it serves. Our new bakery in Walthamstow combines functional steel and wood with pops of of primary colour and charming drawings by our friend Christopher Brown. With sustainability in mind, we’ve used recyclable Tarkett flooring throughout. The tables and planters outside were crafted by our friends at RAW, who offer training and employment to people facing adversity. To share our food as widely as possible with the community, we have partnered with two local food banks: the Rukhsana Khan Foundation and Masjid Tawhid Leyton. 25 Orford Rd, London, E17 9NL

    GAIL's Head of Coffee Jessica Worden spoke at Caffè Culture Show about how we have scaled our craft approach to coffee. We believe in buying the best ingredients, so we seek out partners who share our approach and commitment to quality, like Union Hand-Roasted Coffee Islands Chocolate Brades Farm Dairy Ltd JING Tea and MOMA Foods . Turning these into a delicious drink is a craft, so we have a dedicated Coffee team which partners with our bakeries to deliver Specialty Coffee Association-certified training and instil an ethos of care.

    To welcome in Autumn, we gathered our Head Barista's, Bakery Managers, and Support Teams for BREWx, an educational event carefully curated by our Coffee team. This was designed to connect and inspire our Breadheads on the ethos of our coffee – which centres around knowledgeable sourcing, attention to detail and reliance on skill. We welcomed onto the stage, our Coffee Team who shared their passion for their jobs, our Head Barista alumni whom celebrated the many opportunities a career in GAIL’s coffee offers, and two very special partners Edward Towers from Brades Farm Dairy Ltd who supply our milk and Jeremy Torz from Union Hand-Roasted Coffee who supply our coffee. They shared with us the depth of passionate and dedication they place in their craft – showing us that quality and ethics go hand in hand. Jessica Worden, our Head of Coffee closed the event with an inspiring talk that demonstrated that we are not just a bakery that cares about coffee, we define what good coffee means to our communities every day. A responsibility and privilege we relish. In the afternoon, we celebrated our teams in our Quarterly Awards. This was a moment to recognise the people across our bakeries and support teams who have excelled in representing our brand values centred around care. It was also a moment to applaud all the bakeries that delivered strong results through the quarter - all driven with people and customers at the heart. We applauded over a hundred Breadheads who have Risen with GAIL’s and those celebrating anniversaries. Congratulations all to those that were involved in making the day happen and to all who received an award.

    'Waste Not' is the ethos by which we bake - and build. We do this with partners who share our commitment to sustainability: visionaries who find new ways of doing things. People like our friends at Kenoteq who developed certified low-carbon bricks made from reclaimed materials. They have the lowest embodied carbon and the highest recycled content of any product on the market. We've used them to build our baker's tables in Manchester and Weybridge.
