One of the best parts of our industry is the diverse mix of cuisines and cultures we get to embrace, with team members bringing culinary traditions from all around the world. Saraca celebrates Chef Jacqui’s Grenadian heritage. With hints of nutmeg, cloves, and cinnamon, it brings Grenadian tradition to life. Saraca, a cherished Grenadian Thanksgiving feast, is all about sharing food with loved ones and honouring the community. Jacqui felt honoured to share her culture, food, and Grenadian warmth at work. In celebration of Black History Month, we are thrilled to share that Daniel Rampat, our Group New Business and Innovation Chef, has joined the UK’s largest collective of African and Caribbean chefs, The Future Plate, in an associate role. Dan will continue his role at Lexington, while also championing African and Caribbean cuisine with this talented team. Inspired by his Guyanese heritage, Dan has expressed his excitement at joining The Future Plate and promoting the richness of African and Caribbean culinary traditions. The Future Plate brings together the UK’s finest chefs with a shared mission to elevate African and Caribbean cuisine through luxury event catering, delivering unforgettable experiences for brands, private clients, and corporate events. Their impressive client list includes Sabrina Elba, Naomi Osaka, Nick Kyrgios, Letitia Wright, and Idris Elba. We are equally proud to share that our pastry chefs, Natalie Sheridan and Flore Kubaku, have also joined the collective. Supporting this initiative is something we deeply value, and it was wonderful to see Dan showcase The Future Plate at a recent company event. He wowed guests with a special menu inspired by his Guyanese roots, featuring dishes like pepper pot with short rib, cassava, callaloo, Farine and beef fat granola, and a unique twist on crumble and custard—tonka bean and nutmeg brûlée. This Tuesday was the anticipated final of our BariStar and BakeStar competition! This year, we introduced a new bakery section and a plant-based theme, taking the event to the next level. In two exciting heats, the finalists battled it out for the titles of Lexington’s BariStar and BakeStar 2024. The evening was packed with innovation, creativity, and the spirit of friendly competition. And now, the winners… BakeStar ⭐️🍰: Tim Fisher, with his standout creation: Apple, Cobnut, Vanilla & Caramel Tart—a tribute to British ingredients featuring layers of sweet pastry, British apples, cobnut dacquoise, vanilla cream, caramel, and cobnut brittle. BariStar ⭐️☕️: Samantha Polmear, with her signature Banana Bread Latte—taking inspiration from Australia, where banana bread and coffee are the perfect match. A huge thank you to our guest judges Graham, Claire, and James, as well as our site mentors and amazing suppliers Pact Coffee, UCC Coffee UK and Ireland, Town and Country, WBC, Minor Figures, DDP, and Vegetarian Express for all your support throughout the competition and for joining us on the night. Of course, we also want to give a big shoutout to our incredible contestants! Their creativity, hard work, and dedication were truly outstanding, and it was clear in everything they brought to the table on the night. Lastly, we’re proud to highlight the cause behind the competition — raising funds for Project Waterfall, helping bring clean water to coffee-growing communities. We are thrilled to share that our very own, Jon Lilley, was named Chef of the Year at the Foodservice Cateys awards last week hosted by The Caterer! Jon’s well-deserved win reflects not only his 19 years of dedication to Lexington, but also his exceptional culinary talent, leadership, team development, and his relentless commitment to going above and beyond. He consistently delivers outstanding service and value to both our clients and customers. Jon’s passion for sustainability and innovation is unmatched. He believes in sharing his knowledge and experiences to uplift his colleagues, drive innovation in the culinary world, and support charitable initiatives. His philosophy is simple: to make a positive impact through food. Jon’s dedication to mentorship and talent cultivation is truly impressive. As a strong advocate for apprenticeships, Jon provides young chefs and porters with opportunities through Lexington’s chef school and buddy system. Collaborating with the University of West London and New City College, Jon has seen 21 apprentices graduate over the past two years, with 14 in the current cohort. We couldn’t be prouder of our chef Ace, who took home third place in Chef of the Year at the StrEAT Food Awards by Contract Catering Magazine, competing against 16 other chefs from the industry. Over the past few weeks, Ace has shown undeniable dedication, hard work, and passion into the competition, and it’s been amazing to see how far he’s come since starting with us at chef school. Ace impressed the judges with his innovative dishes, including his ‘Lechon Bad Boy and Ube’— a Filipino-inspired creation featuring crispy pork belly sando, ube brioche, garlic aioli, lechon kawali sauce, and smacked cucumber. His journey is a testament to his talent and growth, and we’re so proud of what he’s achieved so far.
