Saturday 06.04 It was such a pleasure to work with The Ferm to present the first part of our two-part gut health and Korean/Romanian supper concept. Rebecca (Dayoung) Ghim’s kimchi masterclass at e5bakehouse in stunning pictures by Emma Rego. Kimchi is a brilliant probiotic source with one of the widest ranges of species of any natural food. It's a great addition to a healthy diet if you don't eat it already, and traditionally contains some fish products, but can be made vegan too. Rebecca runs The Ferm, a zero-waste Korean fermentary in London, using traditional techniques and principles, her own modern approach and a whole lot of food waste from the likes of Ottolenghi restaurants to make her vegan kimchi. This class gave guests a flavour of her family’s secret recipe and some insightful tips while getting their hands messy making their own jars of kimchi.
