    TUCO announces the appointment of Amanda Pettingill as new Chair, with Phil Rees-Jones stepping down. The University of Nottingham’s Amanda Pettingill has been announced as the new Chair of TUCO. Having joined the TUCO Board in 2015, and becoming Vice-Chair in 2022, Amanda has an abundance of experience within the catering industry including work within contract catering, hotels, sport and the education sectors. Amanda is a long-standing advocate of TUCO and the values of the organisation. Amanda will spearhead TUCO through the coming years, alongside TUCO CEO, Mike Haslin, by attending events, regional meetings, and Conferences to meet with members and discuss how they can get the most out of their relationship with TUCO.     The theme for UK Young Restaurant Team of the Year 2025 has been revealed and entry packs are now available. The overall theme is the evolution of the modern British restaurant, and all entries must showcase our excellent British produce. Teams in the first instance will be asked to design a three-course fine dining menu, that include Scottish lemon sole, British lamb and seasonal dessert using rhubarb. After paper judging, selected teams will be invited to a live semi-final to cook and serve their dishes to guests, then the national finalists will be announced.     New commercial food waste legislation in the UK will come into force at the end of March 2025. The new law means that most businesses will have to separate food waste from other waste streams. Companies must store waste food in separate bins and arrange for tis collection by licensed waste carriers. This is part of Defra's simpler recycling plans that aim to improve recycling rates, simplifier waste management, and benefit the environment. Mandatory food waste separation should ensure less waste food makes its way to landfill sites and is instead disposed of responsibly. The new food waste legislation in the UK is part of a legal statutory instrument to standardise recycling across England. Any businesses in England that produces more than 5kg of food waste per week must arrange separate collections by licensed carriers. #FoodWaste #StopFoodWaste #Recycle #Environment #SayNoToFoodWaste.

    The overwhelming majority of young people still do not eat the government recommended guideline of at least two portions of seafood per week. Seafood is an invaluable source of essential omega-3 fatty acids, as well as zinc, calcium, iron and vitamin B12. Deficiency in vitamin B12 is associated with poor memory, fatigue, and cognitive impairment, hence the recommendation from NHS England that we should eat at least two or more portions of fish a week, including one of oily fish. Yet only 17% of 18-24 year olds consume two or more portions of fish or seafood a week - lower than the national figure of 21% meeting this target. #Seafood #OilyFish #Omega3 #Zinc #Calcium #Iron #VitaminB12 #NHSEngland

    Young people are among the most environmentally conscious demographics in the UK, according to a major now study exploring attitudes to seafood and sustainability. The Marine Stewardship Council (MSC), which is responsible for the world's leading seafood ecolabel, commissions research every two years into global seafood consumer perceptions. For the survey, more than 25,000 consumers in 23 countries were polled, making it the largest global seafood consumer perceptions study in the world. The 2024 edition of this research found that the public are increasingly concerned about the future of the oceans, with 94% of British seafood consumers agreeing that they feel worried about he state of the world's oceans, up from 91% in 2022. #Seafood #Ocean #Environment #Ecolabel #Consumers #Research

    We are now in the midst of October, and many of us may be participating in Sober October, reaping the numerous health and wellness benefits it brings. Nevertheless, there is a growing trend among Millennials and Generation Z individuals towards a teetotal lifestyle or being inquisitive about sobriety. A survey conducted in 2024 revealed that 41% of individuals are intending to reduce their alcohol consumption this year. This inclination is especially evident among younger generations, with 49% of millennials and 61% of Generation Z expressing a desire to cut back on drinking, citing mental health as a primary motivation.
