Lemon powder has a lot of potential. Our team of food scientists and culinary experts had a hypothesis: Could we replace lemon juice with Bluegrass Ingredients’ lemon powder in key formulations? The results were very promising. The lemon powder matched – and in some cases enhanced – the flavor, form and functional benefits found in conventional lemon juice. We found that lemon powder functioned as a clean label flavor potentiator, while at the same time enhancing emulsification in sauces and delivering a more consistent texture in white bread formulations.
