#walnutwednesday Carrot WALNUT Cake time!! 2 C AP flour 2 tsp baking powder 1.5 tsp baking soda 1.5 tsp salt 2 tsp ground cinnamon SIFT above ingredients together 3/4 pound carrots shredded 2 C sugar 1.5 C veg oil 4 large eggs 1 (8oz) can crushed pineapple, drained 1 C flaked coconut 1/2 cup raisins (optional) 2/3 cup chopped WALNUTS (manditory 😀) STIR above ingredients into the sifted dry ingredients Pour in 9x13 pan and bake at 350 degrees for 35-45 minutes FROSTING 2 (8oz packages) cream cheese softened 1 stick butter softened 1 tsp vanilla 2.5 C powdered sugar (or sub date sugar if you run out of powdered sugar) Beat together untill fluffy Let cake cool for 15 minutes before frosting. We added some more chopped walnuts and orange zest to the top of cake for some more texture and flavor. ENJOY!! 🙌🍰

Well, nearly 1% of the global food and beverage trade happens during this 5 day event which is A LOT. So yes, it is imperative that we take part! This is the place to be for all things food and beverage!

We are still dealing with a lot of water in our walnut orchards after last week's atmospheric river storms. We are grateful for the levee system along the Sacramento River, helping protect not only our plant facility, but many homes in the area. Once the next weather system passes and the water levels decrease, our team will be ready for some orchard clean up. Luckily the trees are dormant and VERY resilient, so we expect minimal long-term damage.
