Wanting part of this market, alternative cheese producers are focusing on innovation to gain a spot in your fridge. This topic sparked a conversation with our team on the necessary improvements, ingredient possibilities, and market opportunities for the alternative cheese segment. From what we've seen at recent expos and shows, brands are experimenting with starches to replicate a craveable cheese pull, but are struggling with the stickiness when chewing. Using cashews and other nuts gives great texture, but lacks some of the signature cheeses' subtle notes. Some aren't trying to replicate a classic cheese, but have created their own funky flavors. As a whole, our team agreed that alt-cheese may not be enough to convert an enthusiastic cheese eater away from their favorite products yet, but these innovations are continuing to create a better and better eating experience.
