DE measures the extent of starch hydrolysis, which impacts the sweetness, solubility, and browning characteristics of the ingredient. A lower DE level typically results in a less sweet, more viscous syrup, ideal for providing body and moisture retention in baked goods. Higher DE levels offer increased sweetness and solubility, perfect for confections and beverages. Choosing the right DE level can enhance the texture, flavor, and overall quality of your product.
