What is a point of focus during restaurant health inspections? There are 3 and they are... 1. Proper Time and Temperature Control 🌡️ Time and temperature control is one of the primary focuses during routine inspections because it directly impacts food safety. Perishable foods must be stored, prepared, and served within correct temperature ranges to prevent bacterial growth. Improper time and temperature control is a leading cause of foodborne illness outbreaks. 2. Employee Hygiene 🧼 Another vital focus is employee hygiene, as food handlers are a direct link between the food served and potential contamination risks. Inspectors closely monitor whether employees are practicing good hygiene, which includes: wearing clean uniforms and appropriate hair covers, keeping jewelry to a minimum to avoid physical contaminants, and following hand-washing protocols with designated stations equipped with soap, warm water, and disposable towels. 3. Pest Control 🐜 No one wants to dine in a restaurant infested with pests, and neither do health inspectors want to see signs of pest control issues. Pests like rodents, insects, and birds can carry harmful pathogens, leading to contamination. Inspectors look for: signs of pest activity (droppings, nests, or live pests), well-sealed doors and windows to prevent entry, proper food storage practices that minimize pest attraction, and a clean and organized garbage disposal system. Whether you're walking house to house tomorrow, handing out treats or hosting a party, let’s remember that Halloween food safety remains important — with these expert tips! 🎃 With all the treats and party foods going around, both parents/guardians and party hosts can take a few extra steps to keep Halloween fun and safe. 🔎 Check Treats Carefully Whether it’s homemade goodies or store-bought candy, examine packaging for any tampering. When in doubt, throw it out! ❌ Avoid Unlabeled Treats Parents—if it’s not labeled or has unclear ingredients, especially those that could trigger allergies, play it safe and skip it. Food businesses and hosts, consider clear ingredient labeling as a courtesy for peace of mind. 🧊 Be Cautious with Perishables If you’re hosting a Halloween party, keep perishable treats like cheeses, dips, and meats in the fridge until serving, and don’t leave them out for more than 2 hours (1 hour if it’s warm). Keep cold foods cold, and hot foods hot by using ice trays and warming dishes! 🧼 Practice Hand Hygiene Keep a hand sanitizing station near food areas, especially if you’re hosting kids and handling finger foods. 5 Safety tips for holding hot food (plus a free hot holding food temperature log for kitchen teams). ⏱️ Reheat food quickly If you need to reheat food for hot holding, make sure it happens rapidly. Ideally within two hours. The faster it reaches the correct internal temperature, the safer it is. 🔥 Preheat hot holding equipment Never place food in cold or lukewarm equipment. Always preheat chafing dishes, soup kettles, and any other holding devices. Equipment that's not hot enough can promote dangerous growth of bacteria. ✅ Use the right equipment Not all equipment is built for long-term hot holding. Invest in gear like chafing dishes or specialized food warmers that are designed to hold food safely for extended periods. ⏲️ Allow proper stand time Follow the manufacturer’s instructions for food stand times. If none are available, allow at least two minutes of stand time for thorough heating. 🧑🏽🍳 Cook food to a safe cooking temperature before holding Hot holding equipment isn’t made to cook or reheat food. It’s designed to maintain safe temperatures. Always ensure food is fully cooked and steaming hot before putting it into the hot holding.
