This accounts for 23% of all food waste across the sector with a total of 1.1 million tonnes of food waste annually (Source: WRAP, Guardians of Grub | WRAP). The good news is there is an army of Chefs across the UK stepping up and leading the change to cut food waste! At Winnow, we’re proud to be a partner of ne'ma the UAE’s national food loss and waste initiative, working to cut food waste in half by 2030. ne’ma is reshaping how food is consumed, valued, and saved across the country. Our very own Athul Prasanth recently had the opportunity to introduce Winnow to His Highness Sheikh Mansour Zayed Al Nahyan, Vice President, Deputy Prime Minister, and Chairman of the Presidential Court, at the recent "Al Fina'a by ne'ma" event at Qasr Al Watan. His Highness recognized their efforts and emphasized the importance of scaling innovation to drive sustainable food consumption. In 2024 alone, ne’ma successfully: - Diverted 612,000 kgs of food from landfills - Rescued and redistributed 367,450 kgs of surplus food - Benefited over 450,000 people with rescued food We’re proud to be adding to these savings with AI-powered insights, helping kitchens across the region tackle food waste at the source. As we enter the Holy Month, I would like to wish all those who celebrate a Ramadan Mubarak. Ramadan is a time of reflection, unity, and a reminder of our shared purpose – to make a positive and meaningful difference in our communities. At Hilton, our founding vision is to fill the Earth with the light and warmth of hospitality, and I continue to be humbled by our team members’ determination and passion to bring this vision to life every day. Following last year’s success, our Green Ramadan food waste reduction initiative in partnership with UNEP West Asia and Winnow this year extends to more than 40 properties across 14 countries, including more than 30 hotels right here in the Middle East and Africa. Hotels across the region are also working with local food banks to donate meals to communities in need – in the UAE, I am pleased to share our hotels have once again partnered with the UAE Food Bank. I also continue to be inspired by Hilton’s ongoing work to champion a great workplace for all – from collaborations with organisations like the SEDRA Foundation to partnerships with academic institutions like the Seychelles Institute of Technology and Nigeria’s Wavecrest College of Hospitality, a Hilton Global Foundation grantee. “What would a kitchen look like if it didn’t have a bin?” Waste is a natural by-product of preparing food at scale, but as David Jackson explains, it currently costs the hospitality sector around $100 billion per year. AI technology is already changing the game – and it could even help us reduce food waste by half worldwide. David is Director of Marketing and Public Affairs at Winnow. The company has trained an AI model to recognise food as it’s being thrown away, using a data set of over 320 million images.
