During the Austin Coffee Festival, Fresh Cup contributor Lydia Stolper interviewed three of the city’s coffee legends: Mike McKim from Cuvée Coffee, Joel Shuler of Casa Brasil Coffees, and Charles Emile Lauriat of Trianon Coffee. As part of the panel conversation, each local legend reflected on the evolution of their decades-long coffee careers, and how they’ve seen Austin’s coffee scene transform. Their take? While there are new pressures to confront—from an increasingly crowded market to automation and the challenge of educating drinkers—there was also plenty to be optimistic about.
