Celebrating #CaribbeanHeritageMonth the best way I know how – with my mom! We're cooking up cod fish fillets using our cherished family recipe, all while sharing what our Caribbean heritage means to us. Check out the ingredient list and instructions below so you can enjoy some too! // 𝙍𝙚𝙘𝙞𝙥𝙚 𝙄𝙣𝙜𝙧𝙚𝙙𝙞𝙚𝙣𝙩𝙨: 2-3 lbs of cod fish filets 2 green peppers, sliced 2 red peppers, sliced 2 onions, sliced 1 large tomato, diced 1 scotch bonnet pepper, finely chopped (remove seeds for less heat) Olive oil Black pepper, to taste Salt, to taste (optional) Grits (optional) Fried plantain Garnish 𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬 𝙋𝙧𝙚𝙥𝙖𝙧𝙚 𝙩𝙝𝙚 𝙑𝙚𝙜𝙚𝙩𝙖𝙗𝙡𝙚𝙨: Slice the green and red peppers into thin strips. Slice the onions into thin rings. Dice the tomato. Finely chop the scotch bonnet pepper, removing the seeds if you prefer less heat. 𝙎𝙚𝙖𝙨𝙤𝙣 𝙩𝙝𝙚 𝘾𝙤𝙙 𝙁𝙞𝙨𝙝 𝙁𝙞𝙡𝙚𝙩𝙨 Season the cod fish filets with black pepper and salt. 𝘾𝙤𝙤𝙠 𝙩𝙝𝙚 𝙑𝙚𝙜𝙚𝙩𝙖𝙗𝙡𝙚𝙨: In a large skillet, heat about 2 tablespoons of olive oil over medium-high heat. Add the sliced onions and sauté for about 3-4 minutes until they begin to soften. Add the green and red peppers and continue to sauté for another 5 minutes until the peppers start to soften. Add the diced tomato and chopped scotch bonnet pepper. Cook for an additional 3-4 minutes until the tomato softens and the mixture becomes fragrant. 𝘾𝙤𝙤𝙠 𝙩𝙝𝙚 𝘾𝙤𝙙 𝙁𝙞𝙨𝙝 𝙁𝙞𝙡𝙚𝙩𝙨: Push the vegetable mixture to the sides of the skillet to create space for the fish filets. Add a bit more olive oil to the center of the skillet if needed. Place the seasoned cod fish filets in the skillet. Cook for about 3-4 minutes on each side, depending on the thickness of the filets, until the fish is opaque and flakes easily with a fork. 𝘾𝙤𝙢𝙗𝙞𝙣𝙚 𝙖𝙣𝙙 𝙎𝙚𝙧𝙫𝙚: Once the fish is cooked through, gently mix it with the vegetable mixture, allowing the flavors to meld together. Serve the cod fish filets and vegetable mixture hot, optionally over a bed of cooked grits. #CaribbeanHeritageMonth #FoodReels
