It’s the world’s oldest known cheese, analyzed by Qiaomei Fu and her team at the Chinese Academy of Sciences, as they brie-lieve they've uncovered the origins of kefir cheese. Between chasing the ever-elusive “perfect” results, late-night cell culture sessions, and maybe (just maybe) remembering to eat lunch, finding time for life outside the lab can feel like a Nobel-worthy accomplishment. But here’s the thing: just like an experiment needs controls, we need balance. Trust us, your pipettes will wait, and your data won't get jealous if you take an evening off (probably).
