We want to celebrate our own Chef Henry Hamilton and his work bringing not just farm to table, but tail to snout cooking to our menu. Chef Henry and his team recently demonstrated their skills with pigs they sourced from a local purveyor, using every part of the animal. Nothing was discarded. From tail to snout. The team butchered, brined, grilled and smoked, making porchetta, Al Pastor, Spit Roasted legs, sausage and more. And once they used all the meat, they used the bones for rich, flavorful stocks and soups. This work not only shows our team’s incredible culinary skill, but it also raises awareness – and demand – for this type of cooking, which in turn helps further reduce waste in our food system. Exciting news! Guckenheimer has achieved a 64% reduction in food waste, surpassing our goal of reducing food waste by 50% by the end of 2024. As the first major U.S. food services provider to cut food waste in half, we are proud of this achievement and excited to continue this critical work.
