As the daughter of a Greek restauranteur, her inborn interest in food took a twist from hospitality to healthcare. She also enjoys teaching and has been on the faculty of many local universities. Shon Allen Shon has been in the culinary arts for 19 years, 11 years in healthcare. He is great at training new chefs and sharing his love of cooking. He has been a great addition to the Optalis Team. In his spare time, Shon makes film and music.
