    History of Mustard 📜 🍇 While the precise origins of the mustard plant are not known, what is known is that mustard seed has been used since the stone age. The Egyptians seasoned their food with the seeds and the Sumerians mixed ground mustard seeds with the juice of unripe grapes and used that as a seasoning. Mustard seeds are mentioned in Indian and Sumerian texts dating back to 3000 BCE1.   ⛪ The Romans were among the first to use mustard as a condiment. They mixed ground mustard seeds with unfermented grape juice, known as “must,” to create a paste similar to modern mustard. Mustard plants are also mentioned frequently in Greek and Roman writings and in the Bible. In the New Testament the tiny mustard seed is a symbol of faith.   🍷 Mustard became popular in medieval Europe, especially in France. Dijon, a city in France, became famous for its mustard in the 13th century. The recipe for Dijon mustard, which includes white wine, was developed in the 18th century. 🌍 During the 20th century the use of mustard as a spice or condiment grew to the extent that mustard became by far the largest spice by volume in world trade.   🌭 Today, there are many types of mustard, including yellow mustard, which is popular in the United States, and English mustard, which is known for its strong flavor. Mustard is unusual among spices in that it is mainly grown in the temperate regions of the world, principally on the Canadian and U.S. Great Plains, in Hungary and in Britain, and in lesser amounts in other countries.     What is Mustard? Mustard is a popular condiment made from ground mustard seeds from the mustard plant, added with vinegar, water, and sometimes additional flavorings. It is commonly used as a spread for sandwiches, in salad dressings, and as a condiment for meats. The flavor can vary widely depending on the type of mustard and the ingredients used, ranging from mild to spicy. Mustard is sold in three forms: ☑ As seeds, which are also sold in the spice isle or mixed in with the dry goods as dried mustard, ground mustard, or mustard flour. ☑ As dry powder, that is freshly mixed with water for each serving to obtain the most aroma and flavour. ☑ Prepared as a paste with other spices or herbs, vinegar or wine, and starch or flour to tone down the sharpness. What distinguishes the common types of mustard? 🤔 🌭 Yellow or American Ballpark Mustard: The classic hot dog condiment gets its bright hue from turmeric, not from the ground white seeds from which it's made. It's acidic but not spicy hot. 🍷 Dijon Mustard: A silky-smooth mustard made with brown (and sometimes black) seeds, synonymous with the French town where it originated and that Grey Poupon commercial. Originally made with verjus, an acidic liquid made from unripe grapes, today Dijon is more commonly made with white wine. Because wine is less acidic than the vinegar used in most prepared mustards, the natural pungency and heat of the mustard is accentuated. 🥜 Deli or American Brown Mustard: This deli staple made from brown seeds is mildly spicy and not as tart as yellow mustard. In many brown mustards the hull is left on the seed which gives the mustard its coarser texture and speckled appearance. Some brands may include additional spices, such as nutmeg or allspice to round out the flavor. 🥠 Chinese Mustard: Hot dry mustard (ground from brown seeds) mixed with cold water packs a serious punch. That's because cold water—unlike vinegar or hot water—won't temper any of the volatile compounds that give mustard its heat. This means the burn is big, but it's also quick to fade (in contrast, vinegar locks in a more mild heat that lasts a bit longer). The mustard that comes with your egg rolls at a Chinese restaurant or in the takeout bag is in this category. 🥨 German Mustard: These mustards range in flavor, texture, and heat but the two most popular styles, both made primarily with brown seeds, are hot and smooth, and Bavarian style, which is coarser, milder, and sweeter. #spicesusa #spices #herbs #mustard

Dutch settlers planted the herb in cow pastures and fed them to the cattle so they could produce milk with different tastes. 🥗 The most likely time chives became popular as a culinary ingredient was during the Middle Ages, when they were used in soups and salads. This was also a time when herbs and spices were used to add flavor to dishes.     What are chives? 🌱 Chives belong to the allium family, which makes them relatives of onions, leeks, scallions, and garlic. They have been used in Europe and Asia for hundreds of years but can be found around the world. Chives produce edible leaves and flowers; the green stem is long, pencil-like, and thin, with a center that's hollow like a straw. They grow in dense hearty clumps, and typically are one of the first herbs to pop up in the garden in spring. Chives do not require a lot of preparation since they are often used raw, fresh, and as a garnish. They have a mild onion flavor, making them a popular garnish for dishes like soups, dressings, and dips, along with many egg and potato-based dishes Chives vs. Scallions vs. Garlic Chives 🤔 One of the lovely things about chives, as compared to their cousins, scallions (also known as green onions), is their delicate texture. Unlike scallions, with their wide tubes, chive stems are extremely narrow, which makes them particularly attractive as a garnish, whether chopped and sprinkled over a dish or draped whole across an entrée. Scallions or green onions are much longer, wider, and floppier than chives, and are not herbs, whereas chives are. Chives are related to but are not the same as garlic chives. Garlic chives have wider, flatter stems that are not hollow, and they have a rather pronounced garlic flavor. Can You Substitute One for the Other? 🌿 Yes, you can absolutely substitute fresh green onions for fresh chives and vice versa. Keep in mind that green onions are more pungent than chives, so you may want to adjust your measurements or skip the swap altogether if you're sensitive to strong flavors.
