Stuffed Pepper Casserole Recipe! Ingredients: 1 pound ground beef (or ground turkey for a lighter option) 2 cups chopped bell peppers (any color) ½ medium onion, finely diced 2 cups low sodium chicken broth 1 cup salsa or tomato sauce 2 cloves garlic, minced ¾ teaspoon salt ½ teaspoon oregano ¼ teaspoon black pepper ¼ teaspoon cumin 1 cup long grain white rice, rinsed 1 cup shredded mozzarella cheese Directions: In a large skillet over medium-high heat, cook and crumble the ground beef until browned. Drain any excess fat. Add the chopped bell peppers and onion to the skillet and cook until they are crisp-tender, about 5 minutes. Stir in the minced garlic, salt, oregano, black pepper, and cumin. Cook for an additional 1 minute. Pour in the chicken broth, and use a wooden spoon to scrape up any browned bits from the bottom of the pan. Stir in the salsa or tomato sauce. Rinse the rice under cold water and add it to the skillet. Stir well to combine. Bring the mixture to a simmer, cover, and reduce heat slightly. Let it simmer for 15-20 minutes until the rice is fully cooked. (Alternatively, you can transfer the mixture to a baking dish, cover tightly, and bake at 350°F for 20-30 minutes until cooked through.) Once the rice is cooked, sprinkle the mozzarella cheese over the top, cover, and let it rest for 5 minutes to allow the cheese to melt. Serve warm and enjoy!
