We want to welcome our new Executive Food & Beverage Director, Iona Muir. Iona was born and raised in Glasgow, Scotland where she developed a love of chocolate, grey rainy days and smoked salmon. After graduating from Strathclyde University’s business school, she moved to LA and spent several years working for Global Dining, a Japanese group owned by Kozo Hasegawa, then worked with Susan Feniger and Mary Sue Milliken (known as the Too Hot Tamales after their show on the Food Network). After moving to Cincinnati Iona joined 21c Museum Hotels as they opened their 2nd location for the group, was part of task force for openings in new cities, became an Area Director with them and after over 9 years left to join The Lytle Park Hotel, she was the opening GM of Thunderdome’s flagship restaurant “The Davidson” and is excited to join Hotel Covington as Executive Food & Beverage Director. Iona lives in NKY with her husband, daughter and a collection of pets and makes regular trips back to Scotland to see her mum and stock up on chocolate.

Originally hailing from Buffalo, NY (Go Bills!), Nicole has been proud to call Cincinnati home for the last 12 years. She is obsessed with delighting our guests and developing her team. When she isn’t at the hotel, she loves spending time with her fur babies and her soon-to-be husband, Matt. You can usually find her in our lobby, probably humming a Taylor Swift song under her breath.

Her latest cocktail, Laguna features a tropical combination of passion fruit, guava, dark rum, and blackberry! Laguna was inspired by her love of Tiki cocktails. When Vikki isn’t behind the bar slinging delicious beverages you could probably find her studying for her next whiskey certification, Canadian Whiskey Certification being her most recent accomplishment!
