When planning the launch of Café Nue, our virtual and not-so-virtual pit stop for all things good (for you), we started with a brainstorm: if we were to dream up the healthiest cafe, what would it serve? Collagen donuts, naturally. We were delighted when James Beard Award-winning chef Sophia Roe signed on as our Chef-in-Residence to craft a special white chocolate collagen mochi donut made with our Collagen Gut Barrier+ powder to make this dream a reality. Our Café Nue pop-up truck made its way through LA from Abbot Kinney Blvd. in Venice to Sprouts Farmers Market in Burbank, serving Sophia’s collagen mochi donuts along with iced collagen matcha lattes.
