While there are only two pathways for fatty acids to be transformed into milkfat, there are several fatty acids involved that will make or break achieving your milkfat goal on the dairy. Palmitic is top of mind when it comes to milk fat, but is really the frosting on the cake. Whereas, acetate is behind the scenes (actually made by a healthy rumen) and the true driver of the base of milk fat production.
