This process was already well known in the nineteenth century and is now being revived. It is a form of cold extraction, whereby #hops are added to the finished beer in the bright, lagering, or conditioning tank. The dosages are calculated based on the hop oil content, not on the amounts of alpha acids. #Beer is a polar solvent and the average beer contains roughly 92% water and 5% ethanol. This means that the compounds released by the hops in the cold area are primarily polar. Alpha acids dissolve only minimally in wort or beer unless they are isomerized. On the other hand, especially low molecular esters and terpene alcohols are easily transferred. This is why dry-hopped beers have fruity and floral aromas. Today is German beer day. Cheers! But who knows that rollers are also used in beer production? According to the Bavarian Purity Law of 23. April 1516, beer can be made from water, malt, hops and yeast only. Everyone knows water, hops and yeast, but what about malt? Malt is grain that has been sprouted briefly and then dried or roasted again. To make beer, the malt has to be crushed so that the starch contained in the grain can be effectively converted into sugar for later fermentation. This is where rollers are used for the so-called crushing of the malt. Shot rollers are usually made of a corrosion-resistant material (wet crushing) and have a corrugation (the roller surface is provided with special, high-precision cutting edges) for crushing and processing the malt.
