Improving the drinks industry, how bartenders are seen and heard, as well as working with the sector on bartender development is a huge part of what we are trying drive at Wilde Toast. In the UK, hospitality revenue grew to £144 billion in the year to June 2024 (an 8.1% increase versus pre-pandemic levels). It’s a huge part of the financial and social economy, yet in many cases, staff working in the sector are often left undervalued, underpaid and have little understanding of the huge number of career opportunities open to them. Surely there must be a better way? This is why we created The Drinks Collective, our bartender advocacy program focused on improving bartender career development, training, and well-being (you may have seen my post yesterday about today’s upcoming webinar). Our teams are often the heartbeat for venues, activations and live events, which we (and guests attending) value staff so highly. Wow, a day of wild interviews with some top bartenders. We're conducting research into perceptions of the low & no category in the UK's on-trade sector ahead of an insights report. One bar manager from a drinks-led chain with over 70 sites told us they have never received any brand training for the low and no products in their bar—none at all. The result? Disinterest in the category and a lack of understanding of how to help customers find the right low and no drink— this was straight from our interviewee's mouth. The loss of revenue in that one venue for the low and no spirits category will be huge. Another bartender, who has worked in some of the top cocktail bars across London, said the number one thing low and no brands can do is invest in training bartenders. Even top bartenders don’t fully understand how to use these products or, more importantly, how to tell the brand stories that make them special. His insight was based on his own experiences and the experiences of many of his peers, in so called elite London cocktail bars. The common thread in all our recent conversations about the category? The value proposition of the low and no category is miles off in the minds of consumers and, surprisingly, bartenders too. According to our conversations with bartenders, the category has the potential to explode, but it's still a long way from realising its full potential. During a recent research interview, we uncovered more insights and confirmations of the challenges the low and no-alcohol categories face in their interactions with the on-trade. Our interviewee, an experienced bartender who has held group bar management roles at top venues, shared the following: ▶ An anecdote from the field: While visiting a bar in London, he ordered an Everleaf Marine over ice. The bartender seemed surprised and questioned the request as a potential mistake. It turned out that the bar couldn't serve the drink in this format because it wasn’t set up in their system. ▶ Industry perspective: Over the past decade, when tasked with developing menus, senior management has often treated the low and no-alcohol categories as an afterthought—a "necessary evil." He feels this trend persists today in many of the venues they oversee, despite reports indicating that 1 in 3 bar visits now involve non-alcoholic options. We have heard this from several bartenders. ▶ Imitation products: Both bartenders and consumers dislike imitation products. This sentiment is common and mainly stems from a lack of quality. Products that are marketed as imitations but fail to deliver on taste or experience can harm the category as a whole. ▶ The role of independent brands: Independent spirits brands, not just the big players, offering retros can help grease the wheels for venues to list a wider diversity of low and no-alcohol products. These retros make it easier for bars to offer such products at more accessible price points for consumers. We're currently gathering a wealth of insights, which we’ll be sharing soon. What is becoming increasingly clear is that education and bartender engagement must be at the core of any low and no-alcohol spirits strategy. Holiday Party Bar Rules and Etiquette. 🎄🎁🕎 1. Don’t order a mojito- you’re not going to like it 2. If you are going to order more then one round of drinks start a tab, don’t make the bartender keep swiping your card. 3, When you call the bartender over, know what you want to drink. 4. It’s a Tito’s and soda, not a Tito’s and Vodka. 5. No you don’t want a piña colada or a strawberry daiquiri. It’s cold and you’re not on vacation. 6. It’s tequila and soda not a ranch water. 7. You want fast strong drinks? Throw the bartender a $20 after the first round. 8. Don’t puke in the bathrooms, keep them clean go puke outside . 9. If it’s open bar, pace yourself, you don’t want to be the one that gets put in the Uber first. 10. Remember to tip huge, bartenders don’t get a Holiday Party, you are their holiday party.

How to become a Bartender in California. First off, understand that being a great bartender goes beyond just mixing drinks. You're the face of the establishment, creating a vibe that keeps customers coming back. It's a multifaceted job – you'll need to take orders, craft cocktails, interact with guests, and maintain a clean, organized workspace all while following California's strict alcohol service laws. To really excel, you'll need an arsenal of skills like deep beverage knowledge, the ability to multitask under pressure, top-notch customer service, and an eye for detail. Staying up-to-date on the latest trends through workshops and competitions is a must. Speaking of credentials, California requires all alcohol servers to obtain an RBS certification. Many bartenders also pursue formal bartender training and certifications to gain expertise and stand out. The best bartending schools in the state, like ABC, Professional, and Elite, provide comprehensive hands-on training in mixology, hospitality laws, and more. Their industry connections can be invaluable for finding jobs too. But don't underestimate the importance of experience – start as a barback, volunteer at events, practice at home. Network your butt off by attending industry gatherings. When you're ready to apply, put together a killer resume showcasing your skills and passion.
