Today is National Rosa Tequila Day (US) What makes Rosa Tequila different is that it is aged in red wine barrels, giving it a beautiful pink hue. Tequila’s precursor, a milky, frothy agave drink known as pulque, dates all the way back to Mesoamerican times circa 1000 B.C., when indigenous Mexican tribes would commonly harvest and ferment it. The Spanish invade Mexico and begin cooking agave in distilling pots, calling it 'mezcal wine.' It wouldn’t be until 16th Century A.D., however, that the contemporary tequila we know and love would be first produced, around a territory of land that wouldn’t officially become known as Tequila until 1666. That wouldn’t stop Spanish aristocrat Don Pedro Sánchez de Tagle from opening the world’s first tequila factory 66 years prior in Jalisco, the Mexican state where the modern city of Tequila is located. It definitely wouldn’t stop Don Jose Antonio de Cuervo from founding the first Vino Mezcal de Tequila de Jose Cuervo in Tequila over a century later in 1795, birthing the world’s most successful tequila brand to this day. "Sip, Savor, and Learn: A Very Brief Overview of Tequila" By Vagabond Wineguy Early History of Tequila, Tequila has its roots in ancient Mexico, dating back to 250 - 300 A D, when the Aztecs produced a fermented juice of the aga vee plant called "plaque" for ceremonial purposes. The drink gained popularity after the arrival of the Spanish in the 16th century, and the first large-scale distillery was built in the sixteen hundreds, Commercial Production, In seventeen fifty eight, the quarvo family began commercial production of tequila, using blue aga ve, which is still considered the best variety for producing tequila. By the late eighteen hundreds, "tequila" became a recognized term for aga ve spirits from this region. Modern Production, Tequila is made by cooking and fermenting the juice of the aga ve plant, followed by distillation. There are different methods for cooking and fermenting aga ve, which can affect the final flavor and character of the tequila. Some producers use traditional methods, while others use modern technology and industrial processes. Classifications of Tequila, There are two, main classifications, 100 percent aga ve and mixto (containing other ingredients). Further classifications include Blanco, unaged, Joven, young, repo sado rested, Cristalino, aged, and Curados, aged. The aging process can affect the flavor and color of the tequila.
