When we came home from our 🎣 fishing trip, we always like to order Chinese takeout. Since we’ve been fishing so often lately, I’m tired of Chinese takeout. 😆 Instead we made this delicious salad with lettuces, homemade avocado dressing, chorizo, heirloom tomatoes from our garden, and add some crunch with some tortilla chips. Here is the avocado 🥑 dressing recipe: 2 hass avocado Juice if 1 lemon Pinch of salt 3 Tbsp EVOO 1/4 cup diced onion 1 clove garlic Blend everything together in a food processor until smooth. #foodasmedicine

Making hummus, another easy and delicious dish… You just need: Tahini (see my last post for a simple recipe) A tin of chickpeas Lemon juice Olive oil Crushed garlic Ground cumin Salt Paprika Water for adjusting consistency This is what to do; In a blender / food processor blitz the tahini and lemon juice. Add the olive oil, garlic, cumin & salt then blitz again. Add the drained, rinsed chickpeas and blitz again. If the consistency is too thick add some water and blitz again. Serve in a bowl with a sprinkle of paprika on the top. It is delicious as a dip eaten with flatbreads, tortillas, veg batons or crackers. It’s grilling season folks and we are loving every minute of it! Here’s an easy recipe guaranteed to bring family and friends together over good food this weekend. Enjoy! 🍆🍅Grilled Veggie Kabobs 🫑🧅 1. Chop veggies such as: eggplant, zucchini, grape tomatoes, onion, mushrooms, squash, peppers, and garlic and place them in a large mixing bowl. Add olive oil, lemon juice, parsley, sea salt, oregano and red pepper flakes. Toss to combine. 2. Set the vegetables aside for 20 minutes while you heat the grill to medium. 3. Arrange the skewers on the heated grill and cook for 10 minutes, turning as needed, until the vegetables are cooked and charred in some parts.
