Storytime: Today, I learned that many restaurant chains hiring general managers evaluate three main criteria: 1. Has people skills -> knows how to manage the team and give fantastic service quality to guests 2. Knows how to run operations -> Amazing service will only get your profits so far. Even with a higher figure, ebitda is still often a small percentage 3. Is on the market in 2024 -> ... Now, pick two. The shortage of skilled professionals is impacting the hospitality industry.d On the one hand, there are people who are born loving the industry, loving everything food-related, and with a passion for providing exceptional service making other people smile. On the other hand, running a restaurant profitably requires a depth of operational skills: - Knowing when to schedule who based on an accurate prediction of demand. - Keeping track of stock and being able to take measures to minimise waste. - Juggle all the invoices, salaries, supplier relationships. The tragedy of the industry is that people who are naturally fit to do the job don't have the skills to run it profitably. And some others that do shouldn't be in hospitality. Is there a way forward?
