Turns out that despite the common idea Palo Cortado "makes itself" in the cellar and the mystery behind how a random cask of Amontillado might happen to evolve in a way that make the stuff be a Palo Cortado, it can be made by a skilled cellar master. Palo Cortado is defined as a "fine oloroso" eg oloroso-like but with more "elegance" / less "body". Hence a cellar master could take a young vibrant fino or manzanilla, add it to an oloroso and create a sherry with oloroso characteristics but a thinner body on the midpalate...a Palo Cortado. (Note that a soon to come regulation might mandate that a Palo Cortado spend at least 3 month under flor)

New product: Peder Jeppesen Ida Sandblasted Straight Brandy Estate Briar Pipe, 9mm Peder Christian Jeppesen is an artisan pipe-maker from Denmark. Beginning his career in the workshops of Karl Erik and Erik Nording, he later began a solo career under his own name, as well as under the ‘Neerup’ Moniker. In the years since, Jeppesen has come to be recognized as one of Denmark’s premium carvers, including through his partnerships with Erik Stokkebye and the 4th Generation brand. Before he subdivided his high-grade pipes into the Ida Easy Cut and Boutique lines, Peder Jeppesen’s high-grades were his Idas (without ‘Easy Cut), while his Neerups were his standard-grade pipes. This Ida is from that period. Named after his daughter, the Ida series was an outlet for Peder’s most creative explorations of hand-made pipe carving, often featuring silver ornaments (as this one does) and labor-intensive finishes such as contrast stains (as this one has. The shape of this one is a very Danish brandy, with a distinctly broad base and an unconventionally narrow shank in proportion to its bowl. There is more than a little of Karl Erik’s style in this one – though there’s nothing wrong with paying tribute to one’s teachers. The condition is very good. There’s a little rim darkening, and some chatter on the stem, but I wouldn’t call it major. The pipe is chambered for 9mm filters as standard, but would likely accommodate an adapter of some variety, if its next owner would prefer to use it without one. New product: Chacom Richmond 410 Smooth Bent Brandy Estate Briar Pipe, Unsmoked Chacom is one of France’s most historic and iconic makes. Its founders, the Comoy family, began their career as boxwood pipe-makers in the early 1800s, before briar had even been discovered, with Henri Comoy (of Comoy’s fame) emigrating to England in 1879 and founding the country’s first briar pipe factory. In 1922, Henri and his nephews, the Chapuis, founded the Chapuis Comoy pipe factory in Saint-Claude, France, which shortly after began producing pipes bearing the partnered families’ names – ‘Cha’ for Chapuis, and ‘Com’ for Comoy. Chacom has been the biggest name in French pipes ever since. We’ve had a few of these pipes from the long-discontinued Richmond line recently, but this one might just be the nicest yet. I’ve classified it as a brandy, but it could also be labeled a volcano, or even a banker. What makes it so nice, though, is that the pipe’s tight, straight grain patterns flow from beneath the bowl up towards the rim in a fittingly fiery manner, while its rim and underside are decked in chatoyant bird’s-eyes. As with the other pipes in the Richmond line, this one has two old-world, amber-hued accents and a hand-cut stem. The pipe is also completely unsmoked, with an original bowl coating to help ease in its first smokes. I do notice one or two fills that have fallen out, but these are tiny imperfections and are invisible without very close scrutiny. The pipe also comes with its original box and sock. As with may Chacom pipes, this one has a stinger, but it is designed to be easily unscrewed and removed if its owner prefers not to use one. Chacom has been the biggest name in French pipes ever since. Here’s an interesting shape. It’s from Chacom’s long-discontinued Hexagone line, which was comprised of pipes with six-sided shanks. Curiously, Chacom opted to combine such a shank with a very classically French pear bowl shape. I’m assuming these were high-grade pipes in Chacom’s old catalog, as the briar has been particularly good on all of the Hexagones I’ve seen. This one has its bowl sides covered in bird’s-eye patterns, connected by fiery cross-grain on the bowl’s aft and fore. It also has a hand-cut stem, which was, and is, par for the course on Chacom’s high-grades. This Hexagone is completely unsmoked, with an original bowl coating to help ease in its first smokes. It also comes with its original box and sleeve. As with many Chacom pipes, it includes a stinger, but this stinger is easily unscrewed and removed for those who prefer to use their pipes without one. What were you doing in 1991? For Cornerstone Cellars, Napa Valley, it was the beginning of our story, nestled high above the fog line in the Howell Mountain AVA. After a perchance meeting with Randy Dunn and the opportunity to acquire extra tonnage of Cab grapes, Cornerstone Cellars was born. We recently led a group tasting of our 1990's vintage Howell Mountain Cabernets, hosted by our founder/owner Mike Dragutsky, winemaker Kari Auringer, and one of the original architects of the Howell Mountain AVA, Mike Beatty. The wines all, perhaps not so surprisingly, continued to show character and complexity beyond their maturity. What is the Howell Mountain AVA? Certified in 1983, this region is merely 1,500 acres of vines planted between 1,400 and 2,500 feet above sea level at the northeastern end of the Napa Valley. Soil type is mostly decomposed volcanic ash and red clay, allowing for superior drainage. Although Cabernet is now king for the region, Zinfandel was the most widely planted grape originally.
