How do you select a seafood supplier? Is it pricing, delivery days, particular products, fresh and frozen access, hand cut program? What I’ve found in talking to chefs across the country is that hand cut, cut off time and delivery seem to be some of the most important qualities. Having opened up a new seafood operation myself with no velocity I knew the importance of finding strategic partners like Verlasso Salmon to go to market with. Farm partners like them help add credibility and presence in a market. Walking into kitchens unwarranted and trying to find opportunity goes beyond a price list and certainly in seafood. Teaming up with farms and artisans can help you make important connections. Customers are accustomed to ordering fresh seafood by the pound and hand cut if they aren’t buying whole fish and processing it themselves. One thing I hear all the time in seafood is “we are old school”. That is fine, but bring some new school though by having your processing team get you photography and video content to share regularly with customers. People eat with their eyes!
