Singapore selected 16 types of edible insects fit for human consumption. They spent two years of checking various insects edibility. Bugs have been making appearances on the streets of Singapore for ages, but until now, they’ve never been served in upscale restaurants. Why the sudden change? It’s all part of Singapore’s plan to be a more self-sufficient! Their aim is to produce 30% of their own protein by 2030, instead of importing every last crumb. Is anyone else here a coffee enthusiast? 🙋🏻♂️☕️ I have a "customer success" reflection after the coffee cupping session at Kopenhagen Coffee. Just as everyone has a unique preference for their coffee—whether it's the taste & smell, processing method, roast level, or brewing style. Surely, baristas have their own preference too. Yet, a good barista needs to have an open mind to understand their audience's tastes and adapt accordingly. It's interesting to hear how they have their customer's preference in mind when they source, roast, and brew to meet the market demands while raising more appreciation for different coffee. In the same way, when developing and selling a product, it's crucial to deeply understand our target audience. We must engage with them and present our product in a manner that aligns with their preferences and needs. With our industry knowledge and expertise, we can gradually guide and educate our customers, helping them appreciate our product in ways they hadn't experienced before. 【The pioneer of Hong Kong's local fast-food restaurant - Café de Coral Holdings Limited 大家樂集團 】 Lo Tang Seong built the first Hong Kong-listed restaurant at the age of 53 with his nephews. In 1968, Café de Coral debuted on Sugar Street in Causeway Bay, where two cinemas were located nearby. The privilege in location brought good traffic to the restaurant as watching movies was one of the popular entertainment in 1970s Hong Kong. Prototype of fast food model: Lee Kiu Building branch is next to Jordan Road Ferry Pier. It may brought good traffic, but Lo wondered if the location benefit the restaurant as many people just passed through the ferry pier instead of sitting in for meals. Therefore, the branch switched to takeaway only for customers who buy and go. The tactic was proven by the brilliant revenue and favour from the customers. Chinese dishes in the fast food model: A new branch at 77 Tung Choi Street was launched in 1974, operated with a large amount of pre-prepared food, efficient menus, and self-serve protocol. The success of Café de Coral attracted many imitators, including his younger brother Lo Fong Cheung who founded Fairwood. There is a proverb in Chinese: People of the same trade are always pitted against each other (同行如敵國). Over 20 years of experience in the restaurant and coffee industry: What’s it like? Working in the restaurant business impacts your rating of the overall restaurant's performance. My favorite part is observing and analyzing customers’ habits. In recent years, I've noticed a strong trend toward sustainability, simplicity, and clean flavors. Between 2013 and 2017, I focused on developing Georgian cuisine and restaurants and specialty coffee shops in Kazakhstan. Every year, I traveled to Georgia, studying the local market. But eventually, I decided to narrow my focus solely to the coffee industry. Coffee is its own universe, with unique beans, complex flavor notes, logistics, and suppliers. Coffee brings people together, so at Probarista, we say, "Drink coffee with everyone.» Today, you can find Probarista both in Kazakhstan and Georgia.
