For this new edition, we celebrated the “Latina Souls” of Latin America, a region full of olfactive treasures. Yannick Maestro, General Manager of our Natural Ingredients Division in Mougins, in the Grasse region, France, explains: “We wanted to highlight the rich biodiversity of the region but also the authentic olfactory heritage that is largely unsung in the Perfume industry. Each natural ingredient is a living soul that meets the hands of passionate individuals who take care of them. That is why we also wanted to pay homage to the local communities, these passionate souls that harvest our exclusive natural ingredients, who preserve their ancestral traditions, nurturing both the cultural and natural heritage of their territories.” With an unwavering commitment to traceability and sustainability in our supply chains, we have also invested in the region through two farms, one in Colombia and another in Peru, devoted to cultivating and sourcing exceptional natural raw materials through a unique “Latine” terroir. For the congress, four unique natural ingredients were selected from our exclusive palette of raw materials. These ingredients were showcased through their exceptional olfactory spirit, enhancing creations ranging from eau de toilette to candles. We also revealed one of our new natural ingredients for the first time: Petitgrain Lime Essence. Anne-Laure André, Project Manager at our Natural Ingredients Division, mentions: “We carefully cultivate lime trees on our COSMO Colombian farm. We extract their fresh leaves to obtain a rare extract of Petitgrain Lime essence, rich in fruity, zesty, and vegetal notes.” From the fertile land of Northern Peru, our rare Cacao Blanc CraftivityTM, derived from white cacao beans and developed in collaboration with a master chocolatier, re-explores balsamic notes, offering a rich yet gourmand scent. “We also presented our Schinus Molle MD ‘Molecular Distillation,’ originating from the sacred lands of the Incas in Peru, which reveals a spicy effervescence and delicate woody facets, whereas our Peruvian Ginger CO2 exudes the freshness of the highlands at the juncture of the Andes and the Amazon region, reflecting the vibrant soul of the forest”, mentions Anne-Laure André. The Journey of Matcha: From Leaf to Cup Let's delve into the fascinating process of transforming green tea leaves into that exquisite matcha powder we all love. Here’s an inside look at the intricate journey of matcha production! Cultivation and Shading Our journey begins in the lush tea fields of Uji. The cultivation of matcha is far from ordinary; it’s a refined art. Weeks before harvest, tea plants are shaded using traditional cloths to block sunlight. This technique enhances the chlorophyll content (giving matcha its vibrant green color) and increases amino acids like L-Theanine, which contributes to matcha’s unique sweet and umami flavor. Think of it as a pre-harvest pampering session for the tea plants, preparing them to deliver the best quality. Harvesting and Processing When the time is right, the leaves are meticulously handpicked. Only the finest, youngest leaves are selected, ensuring premium quality. These leaves are then quickly steamed to prevent oxidation, preserving their vibrant green hue and nutritional value. Grinding the Leaves After steaming, the leaves are air-dried, and their stems and veins are removed. What remains, known as "tencha," is then stone-ground into a fine powder. This grinding process is slow and meticulous, taking about an hour to produce just 30-40 grams of matcha. It’s a labor of love, resulting in a sweet, creamy, nutrient-packed powder. Every step of this process is infused with care and dedication, making each cup of matcha a true celebration of nature’s wonders. It has been widely documented recently, in global news, that there is a severe shortage of beans which has pushed the price of Callebaut chocolate up by a whopping 45%! 🤯 We had to have a little lay down when we saw the new prices! 🫣 We don’t want to compromise on the luxurious nature of our chocolates by using anything less than the finest chocolate so it has become necessary for a price increase, this is unavoidable as our price point was already very low for the quality of ingredients & the time & passion Ben puts into making them. HOWEVER, it does mean that you fabulous customers will always be more than satisfied that you are still buying the best, & even though the price increased weeks ago we won’t be increasing the prices for another 8 weeks! IWSR is having a nose into the ways in which gin is continuing to innovate through NPD as it looks to maintain positions in core markets. Drawing on local culture and history to inspire flavour is nothing new, but its great to see how brands are pulling on a sense of place to provide a point of difference. Meanwhile, Sakura flowers, sour polemo, hallabong, mugwort, roasted wattleseed, quandong, mondia whitei are all being used to create new flavour profiles, link to local habitats and appeal to our curious natures – at the very least you’re googling these ingredients to see what they are and where they originate!
