This curry is a go-to favorite of mine, especially this time of year and into the fall because it helps me to eat with the seasons according to Chinese medicine. Right now we’re in earth season, also known as late summer, which runs from mid-August to just after the fall equinox. The star of the dish, butternut squash, is the perfect earth season food because the earth element is associated with the color of yellow and the taste of sweet. Bonus: the earth element is heavily associated with your digestion in Chinese medicine, so this curry is usually pretty great for nourishing your digestive system. The pungent and warming spices in the recipe are also perfect for helping your system adapt to the energy of fall. This recipe is super flavorful, and will make A LOT. There are a few special steps, like frying the spices and making a garlic/ginger paste, but trust me, the results are worth it! Everything else you can throw in your slow cooker and let it do the work! This recipe is also super adaptable. Over the years, I’ve modified it by removing foods that give me a little trouble and it’s still delicious!
